I LOVE these recipes. I took a trip to Spain last year, largely just for the food, and it was incredible. We had several dishes just like these...and the Iberico ham is incredible. Let me add one more to the list with this Spicy Chorizo and Shrimp dish http://www.noreciperequired.com/recipe/shrimp-and-chorizo It's great on it's own, or toss a bit a pasta in - that's great too!
