Before I go to bed I combine in a small bowl: 1/3 cup old fashioned oates, 1/4 cup mixed nuts (my favorite combination-- almonds, walnuts & pumpkin seeds), 1 tablespoon dried cherries, and cover with almond milk. I eat it alone or with plain Greek yogurt.

Take an Ezekiel wrap, spread peanut butter on it, sprinkle flax seed, dried cranberries, and pumpkin seeds on it. Fold it in half and cut it into slices for a high-energy, whole-grain snack!

After a diagnosis of MS, I immediately eliminated sugar from my diet. I LOVE ice cream!!! So now I make a thick, frozen drink as an ice cream substitute. Add to a blender: 1 cup of coconut milk, 1 packet of stevia, 12 pieces of frozen banana, enough organic apple juice to allow the mixture to blend, about 1/4-1/2 cup of frozen fruit (I like mango, honeydew melon, pineapple...sometimes I use all of these, but you can also use strawberries, blueberries or whatever you like), and a handful of baby spinach (or kale). Blend on high speed. Mmmm!!! Hope you enjoy this!

Wedge and core an apple, dip in lemon juice (fresh) then roll the wedges in cinnamon.Pack with a dip of peanut butter, rolled flaxseed and fresh shredded coconut. It's packed with nutrients, delicious and the cinnamon is great to give me a boost of "alertness"!

I put baby carrots, sliced apples, walnuts and raisins into a little container for a snack. Lemon juice on the apples keeps them from turning brown.
