Well I just love taking cherries and takeing the pit out. Then fill them with a nice aeole sauce and dipping them in a creamy butter cream dressing. Next I let those marinate for bout a minute before shoving them nice and deep inside a bannana nut muffin. Mmm then drizzle a little chocolate plum sauce on top with a little chili pepper shavings (preferably habenaros) Its the beez knees!!!

Beans ( black-eyed peas, black and garbonzo ) onion, and colored peppers...add some uncooked fresh corn OFF the cob, plain or tossed with a little vinager based dressing. Gobble with blue tortilla chips or add some to your salds or omletes! Delicious!

By far my favorite healthy snack is fresh fruit and vegetables, but I also like cottage cheese, plain dried cereal, and packets of instant oatmeal (not together!). In the summer I also enjoy a handful of frozen vegetables-- straight from the freezer-- and have recently started baking extra small sweet potatoes and keeping them in the refrigerator for when a craving hits!

After school the kids are usually pretty hungry so I usually try to give them some fruit, maybe a cheese-stick, sometimes a fruit smoothie with coconut milk plain yogurt and frozen fruit. They also like pretzels or the big soft pretzels.

I make an "Oat and Amaranth Cluster" snack that can also be eaten for breakfast. It has oats, amaranth, egg whites,(raw)honey and any kind of dried fruit(s) and nut(s) you have in the pantry. Each cluster (about 2 TBSP of batter) has 120 calories, 1g saturated fat, 3g unsaturated fat and 19g of carbohydrates. There is no added sugar - only natural sweeteners from the honey and dried fruit. My kids love them, and my clients love them. They are filling and provide fiber and carbs for long-lasting energy.

My favorite snack is baked kale chips! Chop into pieces, place on tinfoil-lined baking sheet, spritz lightly with olive oil, sprinkle on lemon pepper (or any other seasoning), and bake at 305 F for 12 minutes. They should be crisp but not brown. YUM.
