Right now, my favorite healthy snacks are "Morning Glory Muffins." I got the recipe from Cooking Light's website several months ago and my whole family absolutely loves them, even my 2 year old niece who is notoriously picky! They are full of fiber, dried fruits, and nuts, all of which I try to buy from the bulk bins at Whole Foods. My family likes them so much that I usually make a huge batch of them every couple of weeks. They are filling, and with the dried fruits, satisfy my sweet tooth.

I love carrots and Genji Miso dressing. Also, make your own gluten and sugar-free mix with the bulk section cashews, almonds, whatever nuts you like and the dried fruit of your choice. Of course, if you want the sweet, you can sub the honey-roasted nuts or a chocolate chip.

I love salty, crunchy snacks - but those are usually loaded with fat and calories and low on nutrition. I now satisfy my salty/crunchy craving with baked garbanzo beans. Take a can of garbanzos, rinse well and drain. Put garbanzos in a bowl with just a touch of olive oil, salt, and a little all-natural Cajun seasoning (if you like a kick - can be omitted if not). Mix well to coat beans and spread in a thin layer on a cookie sheet. Roast in 350 oven for about 20 minutes, or until crunchy. Mmm MMM good - loaded with fiber, low in saturated fat, and still fulfills those "bad food" cravings!

I adore natural peanut butter that I buy at Whole Foods, and make sandwiches with PB and top them off with fresh fruit. My favorite PB sandwich is with strawberries. Another yummy sandwich is PB with bananas. Breakfast, lunch, dinner, or snack, a PB sandwich never fails to satify my taste buds and stomach.

Victoria says …

I love a peanut butter and banana sandwich as a snack. It's good but when I am on the run its hard to slice the banana perfectly. So I make a regular peanut butter sandwich on whole wheat bread and eat the sandwich with a banana in bits. The combination is delicious.

My favorite snack is a banana or a pear. It's already wrapped in an ecofriendly package, packed with nutrients and gives me the lift I want from a snack.

Our favorite family snack is garlic-ginger-edamame. Boil, drain, & rinse edamame. (only cook 2/3 of the time according to package) In a pan, stir fry minced garlic, grated ginger, & edamame. Drizzle a little bit of sesame oil & hawaiian salt (or coarse salt). (For the adults, we also add chili pepper flakes during the stir fry.) It's so simple & so healthy. (It's always a staple during cold season) ;0)
