Got a Great Mozzarella-Based Recipe?

It’s week two of our collaborative 8-Week Recipe Contest with food52, an online community for home cooks. Last week, the food52 folks collected recipes for cucumbers. They are now narrowing it down to two finalists and the voting for best cucumber recipe begins Wednesday! Now, do you have a fabulous original recipe using fresh mozzarella? This week is your turn to shine. Go to food52 to submit your recipe for a chance to win a $100 gift card from Whole Foods Market. Don’t forget: winners of the eight weekly contests will be eligible to win a grand prize of a $1,000 Whole Foods Market gift card! Want to get a head start on the remaining contests? Here’s the list:

For a delicious sandwich, spread pesto on two slices of sourdough bread. Layer a sliced medium-sized ball of fresh Mozzarella over one slice, a few red onion rings and two slices of tomato. Place the other piece of bread on top and grill the sandwich until the cheese is melted and the bread is golden brown. Cut in half and serve with tomato basil soup. Serves 1-2.

Honestly for this time of year it's the fun of grilled pizza. Frsh dough, fresh mozzarella, fresh basil, sliced tomatoes, olive oil and on the grill. Many hands make it fun!

Best Wrap Ever Fresh Mozzarella Fresh Basil Tomato Slices Grilled Eggplant Balsamic Vinegrett Take these ingredients and assemble in a delicious whole wheat wrap. YUMMY!

Grilled mozzarella and tomato bruschetta w/basil: 1 large ciabbatta bread sliced in half 1 large can of muir glen fire roasted diced tomatoes (drained) 2 balls fresh mozzarella large spoonful garlic paste or chopped garlic olive oil kosher salt and pepper bunch of basil Heat grill. Mix small bowl of olive oil with garlic, salt and pepper. With pastry brush or basting brush, coat both open sides of ciabbatta bread. Spread tomatoes evenly between 2 sides. Slice mozzarella into thick pieces and divide on bread. Place bread face up on grill and close for 10-15 minutes. Take off grill on large platter and roughly tear basil on top. Slice into big pieces for dinner or smaller for appetizers. Bon appetit!

Mozzarella veggie muffaletta, New Orleans style - round muffaletta bread, big ripe Creole tomatoes, olive salad (the good kind, with carrots, cauliflower, capers, etc). slice the bread, brush insides with olive oil, layer thin slices of tomato, thin slices of mozzarella, and olive salad, repeat, repeat again if you're extra hungry! close the bread and lightly toast. Yeah, you rite!

Mozzarella pasta salad: fresh mozzarella, grape tomatoes, red onion, cooked pasta, XVOO, salt & pepper. Yummy!

Mozzarella burgers... Mix 1 small grated white onion with 1-2lbs. ground angus. Next make a thin patty about 5 in. in diameter. Place 1-2 slices mozzarella on patty, then make another patty to place on top of cheese. Pinch edges together to hold cheese inside. Salt and pepper then toss on grill. I like to toast my buns on the grill also. This make a yummy, cheesy burger.

Pepperoni and Olive Pizza 1 prepared pizza dough 8 oz. prepared pizza sauce 1/4 lb. sliced pepperoni 1/3 cup sliced olives from the olive bar (your favorite kind) 8 oz. fresh mozzarella cheese, shredded or cut into little slivers. Olive Oil ( your favorite kind) Preheat oven to 425 degrees. Lightly grease pizza pan with olive oil using pastry brush. Pat dough out onto pizza pan. Spread sauce on dough using the back of a fork. Top with pepperoni and olves. Then add the fresh mozzarella cheese, spreading out to cover pizza. Bake about 25 minutes, or until crust and cheese are golden. My family loves this recipe. And I love it because it is quick and easy to prepare. All of the ingredients can be found in or near the Whole Foods deli department.
