Lighten Up Your Meals and Your Budget for Summer

It’s grilling season, and for good reason. Who wants to turn on the oven if you don’t have to? Quick, light meals made at home with fresh whole foods are a health- and money-saver compared to going out. From Dad’s Day to Labor Day with fireworks in between, heat up the grill and keep your house and budget cool. Here’s one of our favorite tricks taken from the pages of The Whole Deal value guide: shop once, grill once, make three meals. Here’s the plan: Make the Honey Mustard Chicken and Veggie Kabobs. The next day, use the leftover chicken in a Grilled Chicken Salad, and then use the leftover veggies from the kabobs for amazing Grilled Veggie and Goat Cheese Wrap on the third day. Here are the recipes to make it all come together. Honey Mustard Chicken and Veggie Kabobs Feel free to substitute with tofu or whatever kabob-friendly meat or seafood we have on sale…or not, because—not to brag—our chicken is always a great value for your values. Grilled Chicken Salad with Peach-Pecan Vinaigrette For extra flavor, grill the peaches and red onions, too. The fruity, nutty dressing here is made without added oil and is just one example of a healthy salad dressing. Grilled Veggie and Goat Cheese Wraps These wraps are wonderful for a summer supper or packed lunch (wrap in waxed paper for portability). Your one-stop shopping trip gets even easier! i love all the fresh fruit in the summer. sometimes i buy too much though. when i have some random bits of fruit "leftovers" i just make smoothies like this one - http://www.cooking4carnivores.com/2009/06/little-bit-fruity-addicts-admission.html a great way to get more fruit in my diet and not waste what i have already purchased!

I love how you're taking the leftovers from one meal and stretching them out into three. That can be a VERY big challenge as a home cook - finding ways to stretch your grocery dollar with shopping the sales, creative leftover makeovers, and filling up on veggies, legumes, and cheaper cuts of meat - all to keep costs down.

All of these light menu ideas are making me hungry! I've been on the hunt for healthy and easy to prepare meals that I can take to work. These fit the bill!
