Texas peaches are so good this summer that I’m eager to include them in as many meals as possible. Breakfast, lunch, dinner and dessert, I can’t think of anything that a peach can’t improve. Oh those recipe links look delicious! I've flagged quite a few to try. I tried something similar to the recipe above, peaches and spicy chicken. It was excellent, not over powering with the spicy aspect as the peaches helped balance it out. Peaches and oatmeal make a great breakfast also. Nexy I will try the peaches and french toast.

I was experimenting and came up with a grain-free coconut peach crisp with a double-layer of crisp and a double helping of peaches. It turned out so delicious!

Grill on both sides. Top each half with a little goat's cheese. Drizzle with maple syrup. Enjoy hot or at room temp. Go Colorado peaches!
