My favorite salad dressing is: 1/4 cup extra virgin olive oil, juice of one lemon; 2 cloves of garlic pressed through a garlic press and pinch of salt. I place all ingredients into a jar that has a lid. Shake. Then I toss this dressing on spinach. The Flipping Spinach salad.

Interesting to hear the mix of greens recommended. Also enjoyed the dressing, though it seems heavy on the oil. I prefer the one written by Beryl on June 5th. Flavorful and less fat.

I live in the Bahamas and my best friends grandmother makes jams from the native fruits we grow here. My friend frequently uses the jam to make salad dressings. She says that any type of jam is appropriate for this recipe: 2 tablespoons of jam, 2 tablespoons of vinegar, 1 cup olive oil, and salt & pepper to taste. She also includes other seasonings depending on the jam she uses. For example, when she uses seagrape jam she includes basil. I guess you can experiment with different tastes!
