I can't believe nobody's used cilantro yet (course I do also realize cilantro might not be on YOUR favorite list...gasp!!) My fav sammie is a version of the Vietnamese bahn-mi: crusty baguette portion (halved horizontally), mayo & a drizzle of srichacha sauce on both halves, cuke slices (fairly thick ones), meat is optional-I like chicken-can also use your favorite hummus, then top with a mix of shredded lettuce (romaine pers. fav) & shredded carrot tossed with a tsp of rice wine vinegar & about a tblsp of sweet chili sauce, & then top with fresh cilantro (I trim off most of the stems)--how much is totally up to you (I probably use a handful for a 6" bread section). That's it!! Tastes fresh & summery to me. You have GOT to try one :-D

Whole Grain Wheat Bread or any sandwich bread you want. Peach Butter Fresh Peaches Bacon Gusto Antica Taleggio Raw Milk Cheese Grill it like a regular grilled cheese, but use the bacon grease instead of butter. DELICIOUS!!!

A fresh ciabatta roll - toasted... Tomato right out of the garden... A dash of Fresh basil... Some crumbles of Goat cheese... A drizzle of Balsalmic Vinegar And what ever other veggies I have in the fridge. Yum!

A simple, make ahead party sandwich! Plus a great use for left over grilled vegetables. ½ cup marinated artichoke hearts finely chopped ½ cup of your favorite olives pitted and chopped ½ tsp oregano 1 round loaf of crusty whole wheat or white bread 1 jar 365 organic roasted red peppers strained left over grilled eggplant slices left over grilled zucchini and squash slices 1 large ball fresh mozzarella sliced 6 slices provolone cheese Slice open the loaf of bread horizontally across the middle. Remove some of the soft bread from the interior. Combine the firsts three ingredients and spread over the interior of the bread. Then place a layer of roasted peppers on the bottom half of the bread, followed by provolone, eggplant, squash, zucchini, and fresh mozzarella slices. Place the top of the loaf over ingredients and press the sandwich down with your hands. Slice the sandwich into wedges and serve. This sandwich is great made the day before! Wrap it well, refrigerate and slice just before serving.

Yum! Two of our favorite summer sandwiches: Fresh soft Pita (top 1/4 taken off) + cream cheese + Sliced black and green olives + sprouts Toasted bread (can be grilled) + little mayo (nayonaise) + red or green leaf lettuce + sliced tomato + slice of American cheese + ground black pepper Pair with some freshly brewed green iced tea for a nice summer meal.

Ok, these are more like summer rolls, but I would choose these over ANY sandwich. Use rice wraps/ tortillas as your bread. Of course in order to soften them up, you will have to soften them up in a shallow pan of water, but let the water drain off before adding the contents of the wrap. For the filling I love: -lots of lettuce (iceberg adds a nice crunch) -edamame hummus -julienned cucumbers, carrots, red peppers -sprouts -baked marinaded tofu (I just use Tamari and sometimes some grated ginger) -a squirt of sriracha -a blob of hoisin -fresh chopped cilantro Roll them up and dip in a peanut sauce if you like. So crisp and refreshing on a hot summer's day!

Real sourdough bread, lightly toasted, lots of lettuce and tomatoes, vegan mayo, salt and pepper. Way better than it sounds esp if using a variety of lettuces and heirloom tomatoes. So much flavor there's no need for the B in these LTs.

Here's my favorite summer sandwich recipe: Take two slices of whole wheat bread and smear liberally with pesto. Between both, sandwich ripe avocado slices, baby spinach leaves, diced sundried tomatoes and slices of mozzarella. Grind black pepper over the concoction before placing in a panini press until mozzarella melts, about 5 minutes on high. Enjoy the amazingness.

Chicken Salad with Basil Pesto and Beans 1 lg can white meat chicken drained or 2 lg roasted chicken breats shredded 1/2 medium red onion finely chopped 1/4-1/2 cup mayo w/ olive oil 1 can kidney beans drained 2 Tbls basil pesto (homemade or storebought) Pita Bread Fresh baby spinach leafs and sliced tomato (optional) Mix first five ingredents. My favorites: #1-for a spicy craving: toasted Whole Foods wheat honey bread with grilled granny smith apples, humbolt fog cheese, caramilzed onions, basil with honey mustard and curry. #2-for a sweet/tangy craving: toasted hearty honey wheat (I just love that bread!), grilled eggplants, caramalized onions, ripe Brie, basil and fig jam and a drizzle of balsamic vinegar. My favorite anytime sandwich is a follows: 2 slices of a good whole bread low fat cream cheese 1/2 of a fairly ripe small avacodo sliced tomatoes sliced red onion Spread cream cheese on one slice of bread Add sliced tomato and red onion Spread avacodo on second slice of bread Put together and enjoy. Yummie, Yummie!

A great summer sandwich is the Creamy Mango. Take a ripe mango; cube it and mix with sea salt, olive oil, pepper. Cut apart some bread with a good crust. Spread on some cream cheese, or creamed tofu. Place the mango cubes on top of that. Finally, place some red onion slices and butter lettuce leaves. Enjoy it as an open-faced sandwich.

My favorite sandwich is tofurky slices with shredded carrots, lettuce, hummus, alfalfa sprouts. I usually use the 100 calorie slices of bread. I also love black bean burger sandwhiches which includes black bean burger, nayonnaise, lettuce, tomato, zucchini slices. I stuff these either in bib lettuce or pita with other mixed veggies. Ranbow sandwich!

Great for kids: Tomato Bacon Grilled Cheese. Makes 4 Servings Ingredients 8 slices bacon 1/4 cup butter, softened 8 slices white bread 8 slices American cheese 8 slices tomato Directions Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside. Heat a large skillet over medium heat. Spread butter onto one side of each slice of bread. Lay 4 slices of bread, butter side down, in the skillet. Top with a slice of cheese, 2 slices tomato, bacon, and another slice of cheese. Cover with a slice of bread, butter side out. Fry sandwiches until golden on both sides.

California Grilled Veggie Sandwich 1/4 cup mayonnaise 3 cloves garlic, minced 1 tablespoon lemon juice 1/8 cup olive oil 1 cup sliced red bell peppers 1 small zucchini, sliced 1 red onion, sliced 1 small yellow squash, sliced 2 (4-x6-inch) focaccia bread pieces, split horizontally 1/2 cup crumbled feta cheese Directions In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator. Preheat the grill for high heat. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches
