Don't forget dessert! Cheese pairings can be endless amounts of fun! Tickle your tastebuds with some not so common treats like: Shropshire and a tawny port for dessert. Take a wedge of Parmeggiano Reggiano, chunk off some pieces, drizzle with a little honey, and sprinkle toasted hazlenuts or walnuts crushed in your hand...mmmm!!!...finger lickn' goodness. Another easy mouthwatering dessert could be taking thick slices of a smoked mozzarella or provolone, wrapping it in some phyllo or lumpia wrapper and tossing it in hot oil, frying until golden, drizzle over honey or a melted fig preserve, sprinkling with nuts. The oozing gooey cheese wrapped in beautiful layers of texture, sweetness, a touch of saltiness, and a hint of rustic smokiness takes fried cheese to another level. Exploring with different cheeses is half the fun. Your mouth will be singing it's own happy tune and thanking you, begging for more of those little surprises not so common in the U.S., but well known in many other countries! Bon Appetito!

These recipes look great. I love incorporating cheese into my recipes. As you point out, just a bit can go a long way like in the Pear, Gorgonzola and Walnut salad. Of course...if you don't mind the fat, I think the king of cheese dishes is Fettucini alfredo.

Cheese is another healthy food product that consumers come across in the market today. There are so many varieties. I have seen on television an interesting item in the cheesse making process. The cheese curd seems so facinating and useful.
