Sometimes I roast carrots with olive oil and sea salt, but my favorite way is to simply steam the carrots and then add a little butter, sea salt and some crushed, dried tarragon. Everyone loves this! :)

I've made Carrot Pie. Its quite similar to pumpkin pie and just as good or better. Top with some organic whipped cream and a sprinkle of cinnamon or nutmeg. Serve warm or cold.

My mom always cooked carrots with potatoes, and then mashed the whole thing. I always loved mashed potatoes with carrots in them!
