I just tried the carrot ribbon idea.I took one large carrot, sprayed a pan lightly with canola oil and sauteed for about one minute with bragg liquid aminos, pepper, and onion power. Hits the spot for a salty snack without all the calories.

Shredded carrots are added to my meals that use ground meat. Ex: meat loaf, sloppy joes, chili, meat/bean dip. To keep from cooking out all their goodness, I cook the meat 'till almost done and then add the carrots. Be sure to go for a short shred if you're trying to hide the carrot.
