When I was in grad school I started making homemade granola bars to take to class and clinical to save money. The recipe is so easy and there are no artificial sweeteners or fillers in them that I don't know about. It's also really fun to switch up what dried fruit and nuts based on what I have on hand and make a unique batch each time. Some of my friends have started making savory versions too. It makes me happy to know I'm saving money and putting something healthy into my body.

Peanut butter on rice cakes- quick and easy with a nice crunch. Sometimes I add chocolate chips or a chocolate bar broken into pieces right on top of the peanut butter. Lara bars are great too. Interestingly, I prefer the ones with chocolate chips- cookie dough, peanut butter cookie with chips. (Can you tell I love chocolate??)

I have been making whole wheat couscous and adding all kinds of fresh veggies like cucumbers, tomatoes, onions, peppers and cilantro! Makes a great salad that everyone loves! Amazing how many people have never eaten couscous! Staple at our house!

I always grab dried apricots or almonds for an on the go snack! I like to keep lots of rice varieties in my pantry, definitely a staple 'round here! :)

I always have a good stock of organic frozen berries, organic, vanilla yogurt, and some delicious variation of granola. Just mix up some of the fruit with the yogurt and top it with the granola. It satisfies my sweet tooth, gives me a great balance of protein and carbs, and is a perfect cool down snack for the hot Texas weather.

Spread 365 almond butter on rice cakes and top with sliced bananas -- great as a snack or for lunch. Also, it's great for people on gluten-free diets!

My favorite snack....Tofu nuggets. Firm tofu drained of as much liquid as possible. Dredge the tofu, which has been cut into bite size pieces, in butter followed by dredging it in Nutritional yeast with whatever seasoning you like (garlic, seasoned salt etc). Bake at 350 for 30 mins. then turn the nuggets and bake for an additional 30 min. Eat with whatever dipping sauce you like. Great warm or cold and much better than any McNugget you can buy.

Love love love trail mix, especially when you can make your own concoction!! Almonds, walnuts, assorted dried fruits (raisins, dried cranberries/blueberrie/cherries/apricots, etc.), some Kashi Warm Cinnamon Heart to Heart or GoLean cereal, and maybe some coconut flakes or dark chocolate chips to finish it off! Delicious on it's own or as a yogurt and/or oatmeal topping...

My favorite summer dish is kale with carmalized onions, kalamata olives with a avacado and balsamic vinagrette sauce. Delicious either hot or cold, as a main dish or a side dish or even on a sandwich.
