Summertime is the perfect time for easy meals and snacks. A well-stocked pantry can help you feed the crew and get back to the pool, hammock or great summer book more quickly. This basket is a collection of a few of our favorite healthy snacks and staples so that you’ll be covered when the stomachs in your house start rumbling. We throw a can of black beans and a can of corn together (drained). If you have tomatoes and a squeeze of lime you can add it. We eat it with pita chips.

Boil eggs and keep in refrig. Good for peel salt and eat or to make egg salad for a sandwich or to eat on crackers.

We love to make tuna or salmon salad and put them in a whole wheat pita...pickles and olives on the side! Yum!

I absolutely love yogurt with granola and fresh fruit- whether I make a small portion after I get home from work or if I want something more filling in the morning. I make mine with vanilla Greek yogurt, organic granola (either store-bought or made from scratch with coconut oil, flax meal, millet powder, hemp seeds, sesame seeds, dried fruit such as raisins and apples and goji berries, shredded coconut, agave nectar, and cinnamon), chia seeds, and fresh fruit- peaches, mangoes, blueberries, raspberries, strawberries, etc. I love it all! Another thing I will snack on during the day is my almond mix- raw almonds, coconut oil, pink himalayan sea salt, and raw sugar. It's pretty amazing. For bigger meals, I am huge on fish (growing up by the ocean) and love tuna and salmon the most. My two favorite meals are blackened salmon over spinach, sliced almonds, sauteed portabello mushrooms, and balsamic vinaigrette. The other is seared tuna with homemade fresh mango-cilantro salsa and an avocado lime sauce. These are all my summer favs :)

I like to heat up garlic & olive oil pasta sauce with capers, green and black olives, anchovies and onions, then add cooked pasta and top with parmesan

peanut butter & a dark chocolate bar!! just dip the bar in the peanut butter and enjoy!! so easy so good (good for you too!!)

I always love making pinto bean dip as a snack - I keep dry pintos and fresh onions in my pantry. Just that plus a little olive oil makes delicious beans. Sautee the onions in a little oil, adding (soaked) beans to the pot as the onions start to get golden. Boil the onions and beans together until the beans are tender, then blend or mash for delicious pinto bean dip

I like to whip up a little white bean and tuna bruschetta(takes about 10 minutes): 1 can white beans(drained) 1 Tbs Extra Virgin Olive Oil 1 can Tuna in water 1 clove garlic chopped 1/2 tsp salt juice of 1/2 a lemon slices of whole grain baguette or bread Place all ingredients in bowl, except for bread. Stir with spoon until slightly creamy,beans should still be whole Toast bread in toaster or broiler and brush with olive oil. Spread beans on toast and go to town. Its quick easy and yummy. Serves 2-4 as a meal more as an appetizer.

Almond butter with a splash of raw honey and a spoonful of coconut oil. Absolutely yummy! Good on toast, even better as a dip for apple slices. This can also be spread on a small pan and frozen, then cut into pieces for a raw treat. Usually, though, I just eat it by the spoonful!

I have a hummus recipe that I created by snagging inspiration from three different recipes I found online. I used something from each of their ideas to create my own. Its great to take to a potluck or just make for yourself. Its great with veggies or bread cubes or pita or chips. Serve it chilled on hot days with iced veggies for a nice light treat! Creamy Hummus Dip Ingredients: 3/4 cup water 1/2 cup tahini (sesame seed paste) 6 garlic cloves, peeled (can use 3 tablespoons minced garlic but NO garlic powders) 6 tablespoons lemon juice (fresh or bottled) 1 tablespoon extra virgin olive oil 1 teaspoon ground cumin 1/2 teaspoon salt 1/2 teaspoon paprika 1/4 teaspoon black pepper 2 15 oz cans chickpeas (garbanzo beans), drained & rinsed Directions: Place 1st 3 ingredients in food processor and process until smooth. Add all remaining ingredients and process until smooth, scraping sides occasionally. Yields 4 cups.

My three daughters & I love the 365 Egg Noodles sauted with garlic, yellow, red, & green bell peppers, organic butter, and a swirl of olive oil practically puts them in Heaven. Add an Orzo salad, with red onion & the Near East Quinoa with fresh rosemary & olive oil and spinach is a refreshing summer treat from Whole Foods!
