Summertime is the perfect time for easy meals and snacks. A well-stocked pantry can help you feed the crew and get back to the pool, hammock or great summer book more quickly. And when that pantry is stocked with tasty options that are free of artificial preservatives, colors, flavors, sweeteners and hydrogenated fats, you’ve got it made in the shade. This basket is a collection of a few of our favorite healthy snacks and staples so that you’ll be covered when the stomachs in your house start rumbling. My mom's homemade ollalieberry jam! It goes great on toast, croissants, pancakes, makes an amazing PB&J and warmed over ice cream is pretty much heaven.

Pasta salad is a great meal that can be made with primarily pantry staples and then whatever fresh veggies you have on hand. I love whole wheat penne tossed with chick peas and kidney beans, spinach, red onion, tomatoes, and herbs, dressed lightly with a vinaigrette.

Pantry items to create a wonderful pilaf: Quinoa, organic canned soybeans, slivered almonds, chopped dates (or dried cherries), olive oil...I add some chopped scallion or onion and then stuff the pilaf into a giant ripe tomato from my garden!

I throw together Energy bars for my boys with Soaked dehydrated nuts, Dates, Raw Honey, Shredded Coconut, Cacoa Powder and some mint extract. And then throw them in the freezer, they're like frozen Raw Mint-Chocolate Cookie Dough!

I make Engery balls. I always have the ingrediants on hands, they're quick and easy, travel well and the kids love 'em! ENERGY BALLS 1/4 cup finely grated carrots 1/4 cup rolled oats or Granola* 1/4 cup raisins 1/4 cup wheat germ 1/4 cup sunflower seeds 1 Tablespoon honey 3 Tablespoons peanut butter(or other nut/seed butter) Mix together and form bite sized balls.

I have to have a variety of nuts, seeds and dried fruit in the pantry at all times! They can be thrown into a salad, tossed in with oat bran or eaten on their own. They are a definite staple!

I try to keep some oats and almond butter on hand to make overnight oats for breakfast. Add some yummy fresh berries and a drop of greek yogurt for a filling meal.

Some of our favorites are a big green salad fresh from the garden sprinkled with kidney or garbanzos from the pantry and also some sunflower seeds and dried cranberries. Popcorn with olive oil, sea salt and nutritional yeast, and flatbread crackers with hummus. Yum!

When I'm just looking for something to grab from my pantry, if I'm cravings a sweet treat, one of my favorites is graham crackers and peanut butter! They always seem to be lying around the house, so they're perfect for an unplanned snack. A glass of cold milk would be a non-pantry addition that I would love as well.

Our favorite go-to snack in the summer is rice cakes with peanut butter long with some type of nuts. Our grandchildren love rice cakes, plain or with peanut butter, as well as any type of nut, but their favorites are honey roasted peanuts and pistachios. I feel good when we have this snack, which is quite often, as I know they are getting pretty good nutrition from the pantry!

Seriously?! when I can't think of what protein to use its ALWAYS a handful of chickpeas... raw, sauteed, or roasted... hot or cold, pureed in hummus or what have you ITS PERFECT and has so many possibilities!! ooo and I'm never without my tortilla chips!

I like a southwestern chopped salad with canned garbanzo and kidney beans,tortilla strips, lettuce, cucumber, tomato, green onion, avocado, and dressing made with lime juice, olive oil, and some taco seasoning. I also like adding sauteed or grilled shrimp.

Anything black bean. Whether it's in the blender or food processor mixed with whatever veg I have on hand; OR quinoa w/balsamic vinegar and chopped pecans/almonds OR a jasmine rice w/coconut milk!! Or all three together :)
