I love plain kefir, a really ripe banana, frozen mango chunks in the blender...voila! Tropical smoothie , good for a small meal or snack and very refreshing!!!

Summer is so hot, we all want refreshing foods. That is the time to go to the beautiful Whole Foods produce department and stock up on shredded iceberg lettuce, apples, peaches, plums, nectarines, mangoes,watermelon, cantaloupe, and berries, then head over to other departments for nuts and soy yogurt. That way, I can slice and dice the fruit, toss it with the lettuce, add nuts like walnuts, peanuts, and pecans, then dress the whole thing with fruity soy yogurt. It makes a nutritious filling light dinner and keeps the kitchen cool because it requires no cooking!

I love summer, even though the heat can be overwhelming, nothing beats grilling everything. I love to grill chicken, all veggies, make a smoked pesto and then assemble it all over fresh baby spinach ..and drizzle just a little vinagrette. So good...my mouth waters just thinking about it!

I add all different nuts &/or seeds to my veggie stir fry & salads - this creates many different combo's of quick dinners - esp since fresh local kale, swiss chard & tons of other veggies can go in both the stir fry & salads. as far as a snack while doing serious hiking - nothing beats the coconut water and nuts & dried fruit!

Easy pasta (filling & always have pre-cooked just rinse / drain daily to keep for 1-week or more) Decide sweet (fruits -fresh or dried &honey/balsamic) or savory (veggies olive oil & garlic) for add-ins and meal is complete.

A can of black beans can be easily jazzed up with your favorite spices and dried herbs like cumin, garlic, onion, chilis, cilantro. Don't forget a dash of hot sauce. You can add a can of sweet corn if you want. Eat this warm over some kind of grain like quinoa, rice or bulgar or make it a dip to eat with tortilla chips.

I love Plockys with red beans and rice tortilla chips with hummus and cholula. I have the hardest time finding these chips though. A lot of times they're sold out!

I use Whole Foods organic walnuts for my pesto made with the hydroponic basil or organic cilantro. I use them constantly in my banana nut muffins. I must have canned organic black beans for my spicy black bean soup. Garbanzos canned make great hummus.

I love to use fresh mangoes and make a salsa, which is delicious with fish. Usually I finely chop mango, jalapeno pepper, half of an onion, tomatoes, cucumber, cilantro. Add some honey, rice vinegar, salt and pepper. Yum.........
