Summertime is the perfect time for easy meals and snacks. A well-stocked pantry can help you feed the crew and get back to the pool, hammock or great summer book more quickly. And when that pantry is stocked with tasty options that are free of artificial preservatives, colors, flavors, sweeteners and hydrogenated fats, you’ve got it made in the shade. This basket is a collection of a few of our favorite healthy snacks and staples so that you’ll be covered when the stomachs in your house start rumbling. Texas caviar made with black beans or black eye peas canned- shoepeg corn- canned- black olives canned rice wine vinegar, olvie oil and little sugar and add any fresh veggies you want! so yummy. would LOVE to win!

I take a a few types of crackers and pair with cheeses and also honey and almonds or other nuts from the pantry for a quick cheese plate.

There's no denying that on a hot day you can NOT go wrong with some PB&J, fruit, and a cold drink. It's a great pantry favorite that works well for the kids as well as the kid inside the rest of us. Throw in some nuts or trail mix for a crunchy side, and you're content until dinner time. There's no cooking required, which keeps you nice and cool, PLUS, you can take the ingredients out of the pantry, and take them with you to the pool or beach for a great snack on the go!! :)

on these 100 degree days,we love watermelon for a summer dinner. when choosing from our pantry, we often have marinated ravioli: cook some ravioli (any type cheesey filling), toss with olive oil, white pepper, maybe some fresh parsley or shredded basil, a bit of garlic, and parmesan of we have it on hand. so delish warm or cold.

A light and easy supper is a salad made with bulgar wheat, tomatoes - both fresh and sun-dried - cucumbers, scallions, kalamata olives and feta. I use broth (chicken or veg)instead of water for the bulgar. For the dressing whisk together some olive oil, fresh lemon juice and fresh chopped basil. And, if I want to make it a little more substantial, I throw in some chopped chicken breast. Then I toss it in the fridge and let it cool until I'm ready to serve it. I can make it in the morning when it's [relatively] cool and not have to bother with dinner when I get home from work. Perfection!

Corn and Black Bean Salsa Canned black beans, fresh corn on the cob, diced red pepper, lime juice, vinegar, salt, sugar, cumin and chili powder. I make this all the time for parties. Serve with chips or as a condiment for grilled chicken or fish.

My son loves Annie's fruit snacks, and we all enjoy the 365 Frosted Shredded Wheats mixed with 365 dried cranberries, chocolate chips, and raw walnuts and pecans. Yum!

We enjoy a bean dip made with great northern beans flavored with olive oil, onion powder, a splash of vinegar and a dash of cayenne pureed in the food processor with mini ricecakes (also gluten-free) or tortilla chips.

My favorite summer recipe is homemade margarita pizza with a wheat crust, sauce of choice (optional because if you slice the tomatoes thick enough you really don't need one), fresh heirloom tomatoes, basil, and mozzarella. Yum!!

My comfort food from the pantry!? Organic Farina (cream of wheat) with raisins or currants and whatever nuts are in the pantry. Add a little brown sugar and I'm a happy, happy girl.

I Love to take fresh baby spinach and baby greens from the salad bar in a ziploc bag from the deli. ziplocs to put in the grated parmesan, and red or white quinoa cooked and cooled. I order Mango pablano salmon from deli 24hrs. before I plan to go to whole foods. I buy 365 french dressing and back to Nature Poppy thyme & Sunflower basil crackers. I also get mini bell peppers red, yellow, orange. I get home & I take a plate and spread the spinach, baby greens, slice up mini bell peppers, quinoa sprinkled all over slice salmon into bite size pieces, sprinkle parmesan all over, Sprinkle dried cranberries, dried cherries, and toasted chopped pecans sprinkle then drizzle 365 french dressing. Serve with Back to Nature Cracker.

I like to make a dip woth greek yogurt, home-grown herbs, crushed garlic, and lemon or lime. I dunk veggies from my garden in it and it's so refreshing!

My pantry is full of vegan ingredients and I love trying new recipes or just throwing things together that sound good (some are keepers, others I won't make again)! I always have canned garbanzo beans on hand to whip up different types of hummus. I also have canned tomatoes and several different types of legumes, and just found a recipe for "3-Bean Soup", which was delicious! I am also addicted to artesan-type vegan breads, and I will toast or grill bread and spread with vegan "butter" for a quick, satisfying snack or meal.
