Grab your stock of olive oil, any cans of bean and stewed tomatoes you have in the pantry, an onion and some peppers from the fridge and any grain of your choice--my favorites is red quinoa I always have in bulk in my pantry. Throw them all in the crock pot and hit the pool for the day. When you get back, tired and sunburned, a nutritious dinner is waiting! Sprinkle some raisins and sunflower seeds over top for texture.
