Summertime is the perfect time for easy meals and snacks. A well-stocked pantry can help you feed the crew and get back to the pool, hammock or great summer book more quickly. And when that pantry is stocked with tasty options that are free of artificial preservatives, colors, flavors, sweeteners and hydrogenated fats, you’ve got it made in the shade. This basket is a collection of a few of our favorite healthy snacks and staples so that you’ll be covered when the stomachs in your house start rumbling. Vegetable pasta salad. Add italian dressing to any pasta and whatever veggies trip your trigger (olives, tomatoes, peppers, onions, broccoli, etc.)

I always love making pinto bean dip as a snack - I keep dry pintos and fresh onions in my pantry. Just that plus a little olive oil makes delicious beans. Sautee the onions in a little oil, adding (soaked) beans to the pot as the onions start to get golden. Boil the onions and beans together until the beans are tender, then blend or mash for delicious pinto bean dip

Almond butter with a splash of raw honey and a spoonful of coconut oil. Absolutely yummy! Good on toast, even better as a dip for apple slices. This can also be spread on a small pan and frozen, then cut into pieces for a raw treat. Usually, though, I just eat it by the spoonful!

I have a hummus recipe that I created by snagging inspiration from three different recipes I found online. I used something from each of their ideas to create my own. Its great to take to a potluck or just make for yourself. Its great with veggies or bread cubes or pita or chips. Serve it chilled on hot days with iced veggies for a nice light treat! Creamy Hummus Dip Ingredients: 3/4 cup water 1/2 cup tahini (sesame seed paste) 6 garlic cloves, peeled (can use 3 tablespoons minced garlic but NO garlic powders) 6 tablespoons lemon juice (fresh or bottled) 1 tablespoon extra virgin olive oil 1 teaspoon ground cumin 1/2 teaspoon salt 1/2 teaspoon paprika 1/4 teaspoon black pepper 2 15 oz cans chickpeas (garbanzo beans), drained & rinsed Directions: Place 1st 3 ingredients in food processor and process until smooth. Add all remaining ingredients and process until smooth, scraping sides occasionally. Yields 4 cups.

My favorite pantry item is pasta salad. I use elbow noodles with italian dressing and then I add whatever veggies or meat I have in the fridge to it so it is different every time I make it.
