As a gluten-free (mostly vegetarian) eater, pantry staples get me through summer. My snacks vary from homemade granola with nuts and dried fruit for energy, to quick grains like quinoa for a dose of carbs and protein, and huge summer salads topped with pantry staples like flax and chia seeds, nuts and beans. Of course no day of summer snacking is complete without some form of nut butter!

Almost every day during the summer, we have fresh, cold tomato and cucumber salad with feta cheese and basil from our front porch. A drizzle of olive oil, and it's the perfect summer salad that NEVER gets old!

Beans! Mix them with almost any fresh veggies with a little olive oil, maybe some home-grown herbs, add to pasta for a full meal, so versatile.

My pantry staples include beans, beans and more beans. Black beans, salsa, avocado and whole-wheat tortillas for quick summer tacos; delicious with any grilled meat or fish on hand. Chickpeas are great for tossing into salads, and making hummus or chana masala. White kidney beans make excellent spreads blended with fresh herbs on crackers or to slather on bruschetta. Red kidney beans are a great summer salad on their own with olive oil, garlic and pepper. All these beans mixed together with fresh grapefruit juice, mint, olive oil, and pepper makes for a tasty, uncommon bean salad.

Our quick and easy snack/meal to bring in the cooler is hummus, rice crackers, carrot sticks, Narragansett Creamery cheese and water. Best part is it is gluten free for a family member with celiacs.

A Mediterranean Sandwich is the best, which means the same as a Mediterranean salad but in a fresh made bun with our fave dressing or any fave condiment, we can even cut it in quarters to keep any leftover in the fridge for a quick snack grab.

This is actually a new favorite of our family: Bean burritos - Whole wheat burrito wraps with brown rice, black beans, corn, lettuce, tomato & Salsa. They are filling and full of flavor, yet still quite healthy. Plus, none of the ingredients will sour quickly!

I don't have a favorite recipe yet. I am new to whole foods. My first visit to the store was yesterday. what a great day. I came home with many great things and ate my way up and down the isles every one was so helpful. I came home and started reading all my labels and pitched my whole pantry out! Luckily I brought home a delicious roasted chicken and stir fry rice it was quick, easy and healthy!
