I will use the black beans and trail mix for my favorite summer cold salad. Use the crackers and eat with my favorite peanut butter or cheese spread. I will even have a picnic and enjoy all my snacks.

I keep a few bottles of organic lemon juice on hand in the pantry and an open bottle in the fridge. A little lemon juice, evaporated cane juice crystals, Stevia, or maple syrup, water and ice can make a tasty batch of ice cold lemonade in the VitaMix. I sub out ice for frozen seasonal fruit when the mood hits me. Sometimes I omit the ice all together and pour directly into popsicle trays, which go into the freezer for a tasty snack a few hours later.... also good for making spur of the moment lemon sorbet....

i love the combination of fruit and cheese! I think a very easy snack is to combine a piece of dried apricot on a whole wheat cracker along with a slice of mozzarella cheese (preferably the boconccini - small balls - cut in half).

I love having kimbap (korean sushi) for lunch or dinner. Favorite sushi ingredient combination include Sesame oiled brown rice with avocado and cucumber. Simple, smooth, and delicious.

One of my favorite snacks is to take dates, chop them up, add some almonds, and top them over soy yogurt. Then drizzle some almond or peanut butter on top (preferably Justin's). It's vegan and delicious.

Our favorite go-to snack in the summer is rice cakes with peanut butter long with some type of nuts. Our grandchildren love rice cakes, plain or with peanut butter, as well as any type of nut, but their favorites are honey roasted peanuts and pistachios. I feel good when we have this snack, which is quite often, as I know they are getting pretty good nutrition from the pantry!

Puree lentils (red lentils - well cooked works best) with crushed tomatoes, onions, roasted garlic, fresh basil oregano salt, pepper and balsamic vinegar. Put over pasta, spaghetti squash, rice or my fav: quinoa and add some TVP (textured vegetable protein for additional vegan protein boost(love WFM Bulk Section - obviously)! Pureed lentil makes a great, wholesome alternative to any sauce.
