Win a Basket of Summer Pantry Favorites

Summertime is the perfect time for easy meals and snacks. A well-stocked pantry can help you feed the crew and get back to the pool, hammock or great summer book more quickly. And when that pantry is stocked with tasty options that are free of artificial preservatives, colors, flavors, sweeteners and hydrogenated fats, you’ve got it made in the shade. This basket is a collection of a few of our favorite healthy snacks and staples so that you’ll be covered when the stomachs in your house start rumbling. For a chance to win this basket, enter a comment by July 26th telling us what pantry-based concoction you like to whip up for a quick meal or snack in the summer. One winner will be selected at random to receive our Summer Pantry Favorites Basket, a $100 value, plus a $50 gift card for you to pick up fresh fruits and veggies or other pantry basics. GREAT basket with a wonderful combination of yummy, wholesome and nutritious items. Our nearest Whole Foods is over an hour which is sad :( We need a Whole Foods in Temecula so we can enjoy all the wonderfuls items Whole Foods carries (not to mention the great wines!)

Yum Yum Yum! Everything in this basket looks yummy. Then again, everything from Whole Foods .... "yummy". I always keep a Fig Almond Cake on hand. It makes for a wonderful snack, especially when craving something sweet.

I like to sprinkle dried fruits and nuts over salad greens and canned beans instead of the usual croutons, sometimes adding a vinaigrette dressing. It's an easy way to make a salad feel fancier and have a sweet/savory mix. And the beans and nuts add protein.

Summer Squash (green & yellow), plum tomatoes, corn from the cob, whole wheat farfalle mixed with lime juice, sea salt, cracked black pepper with freshly grated parm cheese. Yummy!

I enjoy making a healthy twist on old favorites. This is a fruit panini which is healthy and witll satisfy your sweet tooth. Toast two slices of multigrain bread and spread Peanut butter on on one and strawberry fruit spread on the other. In a bowl make a mixture of dates, chopped walnuts, chopped almonds, broken multigrain chips. Mix together to form a dry mixture. Spread this between the two slices of bread. Enjoy!

For the kids summer camp lunches....fresh peanut butter and Strawberry fruit spread on whole wheat bread. Add some multigrain chips and trail mix for snackin' and they're good to go!

I love a peanut sauce made with peanut butter, soy sauce, sesame oil, worstechire sauce, garlic, ginger and a touch of agave. I pour that over just about everything, but love it with rice noodles or chicken with sauteed veggies!

Thank you Whole Foods for giving us a chance to win a basket filled with delicious, healthy foods!! Num-num! Assuming I can only use pantry-based items, one of my favorite meals that I keep on hand is as follows: Cook up some brown rice in a little stock/broth. Add some canned corn, canned black beans, green chilies, and some type of canned tomatoes-chopped, stewed, whole. Drain and rinse all canned items except tomatoes. Save some of the tomato juice. Add some flavor with cumin, cayenne, onion powder, mexican oregano--be adventurous and find the flavors that work for you. (You may also substitute jarred salsa for the tomatoes.) Mix and heat up. Adding the tomato liquid as needed. Place in a big bowl and grab those corn chips and crunch up and sprinkle on top right before serving. (if you don't have some corn chips then look for unused taco shells or heat up some flour tortillas in oil to make them a little crunchy.) Soooo good and you won't be hungry!! PS If we can use foods other than pantry then definitely add fresh cilantro and a little cheese.

A not so hot or humid summer evening with last minute friends stopping over makes for a good white bean soup. thickened enough so that it becomes a dip and everyone brings chips or veggies to make it a filling meal. Enjoy the taste and enjoy your company even more

365 Black Bean and Corn Salsa: Drain and mix together one can each 365 Everyday Value corn and black beans; add one can 365 Everyday Value diced tomatoes with green chiles, 1/4 cup diced organic red onion and 1/2 cup Everyday Value white vinegar. Serve with 365 Everyday Value tortilla chips. Quick and tasty!

Canneloni beans of course. They are the biggest pantry staple in my house all summer long. With any available chopped vegetables and a lemon vinagrette we have a main course or side always available. Simple, nutritious and yummmmy!
