While we never eat junk food and I do not add salt in dishes as a rule we have implemented changes to eat better, reducing the amount of meat per meal, having a meatless day and more vegetables than carbohydrates. My lunches are mostly salads with as much variety of veggies and colour as I can think of.

I don't like how people say that it is too expensive to eat healthy, my family and I do it and we stay on our one income budget. A healthy quick meal my family likes is a indian curry sauce over rice, takes 15 minutes and is delish!

Knowing how important it is for young children to learn healthy eating habits, I only provide healthy foods for my children. Unfortunately, sometimes they find them very boring. Therefore, I started to explore new recipes by visiting Whole Foods recipes page and reading Whole Story. I have tried many recipes and my children love them all. They even said "mommy, you should open your own restaurant". These recipes really helped me a lot in preparing simple healthy meals for my children. Their friends at school are always interested to find out what they bring for lunch everyday.

My blood pressure, weight, and stress level are too high, and I know it's due to what I eat. I want to cut out all fast and junk foods. I want to return to the diet I used to eat when I lived on the West Coast... whole, raw, organic foods. I want to become healthy again. And I want to set a good example for my toddler.

I would like to win a healthy pantry makeover because I think there is too much junk in there. My husband likes to hold on to things for too long and I would prefer some newer staples to ensure the best healthy quality of foods in our pantry. We buy most of our food at Whole Foods, raise a vegetable garden each spring and compost. We try to live a healthful lifestyle and we could do better.

My husband and I both work full time and find it challenging to come home and prepare a healthy home cooked meal for us and our two young children. My goal for 2011 is to order less take out and to cook and eat more organic, locally grown healthy foods with my family. I want to model healthy eating habits and teach my kids that you can work full time and eat healthy too!

I want to buy items with less packaging (because it's better for the environment), so mostly fruits and vegetables. I'm a vegan and I don't eat nearly as many vegetables as I should, so this should help!

After spending the last 2 years buying budget foods to weather us through job losses, graduate school and our special needs children going through some medical issues, we are finally getting back to eating "real meals" again. My goal is to rediscover cooking, embracing new flavors and cultures in cooking and to be creative and unafraid to try new things. I also want to lose 10% of my body weight gained from juggling full time grad school + a full time job and family.

I want to cut down on all the sweets I crave. I think by slowing removing some sugars from my diet, I won't feel like I NEED a treat as often, and eventually I won't need that type of snack at all! I've also been working on cutting out white flours and moving to brown rices, wheat products so I can get those whole grains and fiber!

Healthy eating changes: Meatless Mondays! Plus more veggies and way less processed foods. Cooking healthy without losing flavor. Motivation & inspiration: twitter! It sounds silly but following health nuts, vegetarians, whole foods, etc. is inspiring and I'm getting great ideas for recipes and ways to be healthier. Also, I am motivated by the way I feel after eating a great for me meal.

I try to eat greens for breakfast. I also like to make a pot of whole grains a week so I always have some in my fridge to add to my breakfast. Try sauteing onions in a little butter and adding greens with some sea salt and whole grains. Sprinkle with nuts! In 2011, I plan to shop more frequently for the freshest, in season ingredients and plan to menu plan weekly. The ideas and knowledge Whole Foods shares are motivating and inspirational. My view and passion for healthy food has completely changed because of it. My husband and I will forever be grateful. And everyone close to us knows it too! Being Vegan I already feel that I eat pretty healthy, but I've been thinking this year I'd like to start out going Raw once a week and gradually move it up to 2-3 times a week. In winter it tends to be difficult but I think by spring/summer I can hit that 3 times a week mark, especially with a great Farmers Market here in town. I also think I may try and kick my energy drink habit, although I do try and stick with the healthier ones... maybe even switch to Tea or Coffee at least I'd be saving some cash. All in all I feel that this new year I need to make some important changes in my life to ensure that I am able to have a happy, healthy and long life. I just hit 30 and I see friends and family falling apart (for lack of a better term) due to poor life choices and although I probably have a head start on them I would like to continue pursuing a healthier me.

I would be so thankful to win this contest. I could use the help of a specialist. I am allergic to most uncooked fruits and vegetables and find it hard to find ways to eat those healthy options on the go. Money is definitely tight with only one income in our household currently so any aid in a pantry makeover would be greatly appreciated!

As vegetarians with various diet restrictions meal planning is tough. I want to make more mindful food choices in 2011. And I want to make more ethical food choices, like buying cage free dairy, etc. I want to learn more about how this works. My inspiration for these changes is my husband, who is type 1 diabetic. Seeing how hard this disease is on his body motivates me to make sure he gets the most out of his food as possible. And with our two sons watching I want to live by a good example :)

For 2011, I'm working on a "better" me. As far as food, I want to be better at shopping, not making too many impulse purchases and making sure I have ingredients that I need to cook at home and snacks to eat on the road so that fast food become non-existent in my life.
