Science and Technology in the Kitchen

This class will be taught by Chef Jeremy. For such a basic skill, cooking can seem quite complicated at times. If you’ve ever been cooking along, looked at your food and thought “What happened?” this is the class for you. Learn what makes mashed potatoes gluey and heavy instead being of creamy and light, vegetables turn that unappealing army green, and why steaks overcook after they’re removed from heat? The recipe instructs to whisk until emulsified- what does emulsified even mean? One problem is that a good recipe can only take you so far. Successful cooks seem to operate merely on intuition, but it turns out that great cooks possess something more than culinary ESP; they understand the fundamental science of cooking and how to decipher a recipe down to its basic techniques. They understand why foods act the way they do under different conditions and after this class you will too! Chef Jeremy has been studying the science and technology of cooking throughout his entire career and he will share his experience to help make everything from a simple salad to a potato puree perfect every time. This class is gluten free and has hands on opportunities as desired. Pre-registration is required. On the menu:

·         Salad of Citrus and Greens with Emulsified Bacon and Orange Vinaigrette

·         NY Strip Steak Sous Vide with Rosemary Infused Demi Glace

·         Perfect Mashed Potatoes with Double Heavy Cream and Garlic

·         Bananas Foster Flambé with Vanilla Ice Cream and Cinnamon

Taste Bud Travels: Paella Party

This class will be taught by Chef Ani. Spain is home to some of the most soulful and satisfying seafood dishes in the world. Sometimes a dainty tapas plate of garlic shrimp will hit the spot, but if you want a party, it’s time to grab the biggest pan you have, visit your fishmonger, and learn how to build a great paella. Paella is a marriage of seafood, rice, vegetables and aromatic saffron that is flavorful, exciting and endlessly adaptable. Learn how to choose the right ingredients and cook each ingredient to perfection while melding them together into a vibrant one pot meal perfect for get togethers. While our paella simmers, we’ll snack on some of Spain’s favorite tapas that complement the sweet and savory characteristics of paella.

This class has hands on opportunities and gluten free options upon request. Pre-registration is required. On the menu:

  • Pan con Tomate

  • Spanish Tapas Pinchos (skewer)

  • Traditional Spanish Salmorejo (Chilled Tomato Soup with Olive Oil)

  • Goat Cheese Stuffed Roasted Dates

The Whole Kids Club presents...Mastering the Muffin Tin

This class will be taught by Chef Ani. Muffin tins are pretty cool kitchen tools! We can use them, of course, to make muffins and cupcakes, but they can do so much more! We’ll think outside the muffin and create three dishes that we bake in a muffin tin...but there won’t be a muffin in sight. You’ll learn how to make pizza muffins, salad muffins and muffin tin pies with fresh fruit, and Chef Ani will read you Laura Numeroff’s tale of what happens when you give a moose a muffin, too. This class is hands on.  Vegetarian options are available (please specify upon registration). Classes are suitable for kids 5-14, and are drop off classes- kids only please! Pre-registration is required.
