International Ayurvedic Cuisine - a 3 part series introducing Ayurvedic interpretations of America's most popular foods: Mediterranean, Mexican and Asian.

In many people's minds, Ayurvedic cooking equates to Indian-style spicing. This series of classes shows you how to translate Ayurvedic principles, such as optimizing digestibility and cooking for the various constitutions, into your favorite international dishes.

This class will focus on Asian flavors, such as Thai, Japanese and Chinese. Coconut-Thai Curry, Miso Soup, and Spring Rolls are some of the dishes we will be exploring. Meat, vegetarian, vegan and gluten-free options will be presented.

Nicole Wilkerson is the Director of New Leaf Ayurveda, Sacramento's only full-service Ayurvedic clinic. She has over 20 years’ experience teaching preventative medicine and treating chronic pain and advanced disease. Her latest passion has been working with nervous system disorders and auto-immune disease.
