In this course a complete rustic Italian meal is prepared featuring a chicken entree, side dishes and dessert.  The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy.  Students will assist is preparing chicken scallopine (thin slices of chicken breast sauteed and topped with a reduced white wine sauce and served with sauteed spinach, pancetta and mushrooms), ravioli con zucca (homemade ravioli filled with roasted butternut squash and tossed in a white cream sauce with fresh sage) and an almond and peach tart, followed by the entire meal enjoyed family style. Travelers to Italy may be surprised at the diversity of its regional cuisine.  We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from northern Italy.  Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one includes quail (wrapped in pancetta, topped with mixed dry herbs, then baked and served with mushrooms and truffle oil risotto), roasted butternut squash salad (with fresh rosemary and balsamic vinaigrette) and Piedmont style baked stuffed peaches (with amaretti cookies and pine nuts). Week two includes baked stuffed turkey breast (with parmigiano and pecorino romano cheeses, prociutto, herbs and homemade bread crumbs, topped with a white wine cream sauce and served with homemade potato puree) a mixed roasted root vegetable and cream caramel.
