Carpaccio is a product of modern Italy, invented by a tavern owner in Venice. It usually involves thinly pounded slices of raw meat or fish served atop a light salad. Francesca offers you two versions to enjoy. Thin slices of raw beef tenderloin are served on a bed of greens, topped with shaved Parmesan cheese, truffle oil, and lemon juice. Thin slices of raw swordfish will be served on a bed of mixed greens topped with olive oil, capers, and lemon juice. For the perfect dinner party, serve these salads with a variety of cheeses, olives, cured meats, and crispy baguettes. Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from southern Italy. Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one includes "spezzatino" (Neapolitan style stew made with chunks of pork and beef braised in red wine, onions and tomato puree, served with homemade ricotta gnocchi), seasonal vegetable and apple tart (topped with orange glaze). Week two includes marinated and grilled halibut steaks (topped with a fresh parsley and garlic sauce), spaghetti alla marinara (spaghetti tossed with a sauce that includes fresh tomatoes, mussels, white wine, chilis and fresh parsley), asparagus and carrot salad (in a wine vinegar and garlic dressing) and Sicilian cannolis. Tired of Tandoori Chicken and Saag Paneer being your “go to” Indian choices? Ever wonder what an ordinary “everyday” Indian meal might include? Come and learn to prepare a meal that might be served in homes across North India any night of the week. Dal is a classic lentil soup made with a tempered seasoning and can be eaten alone or paired with a Sabzi (a seasoned stir-fry of eggplant, tomatoes and potatoes). These two dishes are traditionally eaten with Roti (whole wheat, unleavened flat bread). For dessert we’ll prepare Mango Lassi (a drink made with pureed mango pulp and yogurt/milk). Begin with an appetizer of Chicken Tikka (boneless chicken marinated in yogurt and spices and baked to perfection), followed by an entrée of Chicken Tikka Masala (Chicken Tikka folded into a delectable sauce of tomatoes, onions, spices and fresh cream), a side dish of Matar Pulao (a rice and pea dish seasoned with cumin, cardamom and cloves), and Kheer for dessert (rice pudding made with coconut milk and a hint of cardamom). Try Suppli Roman Style Rice Balls made with Arborio rice and filled with mozzarella cheese, coated in breadcrumbs and fried. Crostini supplies the base for a tasty treat topped with sautéed black kale and bits of pancetta. Then enjoy a Bruschetta spread with mussels sautéed in chilies, garlic and fresh herbs.
