Mention Italy and most people think of pasta. These pasta recipes go well beyond your basic pasta and tomato sauce. Francesca starts with Pappardelle con Gamberi, egg pasta tossed with sauteed shrimp and asparagus in a white cream sauce. Rigatoni con Salsiccia features homemade sausage meat sautéed in white wine and herbs, then tossed with pasta and ricotta cheese. Fusilli con Prosciutto is a helix shaped pasta tossed in a rich tomato sauce simmered with a dry sparkling wine and prosciutto, then topped with pecorino romano cheese. Spezzatino is really more of a stew than a sauce. Chunks of veal, beef and pork are simmered for many hours in a red wine tomato sauce until the thick sauce clings to the meat. Master the art of rolling the Gnocchi di Ricotta with Francesca. These homemade ricotta cheese dumplings will then be tossed with some of the ragu sauce. Broccoletti, a southern style salad tossed in a lemony garlic dressing perfectly complements this meal. Finish this rich meal with a Crème Caramello - an Italian custard. Join Healthy Eating Specialist, Jan Kemp, for a delicious and healthy 4-course meal which will take place on our second level mezzanine. At this sit down dinner you will be served dishes prepared entirely from whole foods with no added oils, refined grains or sweeteners. Seating is limited to 20. Involtini di pollo is a popular dish of northern Italy featuring thin slices of chicken breast that are rolled with prosciutto and artichoke hearts. The chicken rolls are then sautéed to a golden brown and covered in a white wine sauce. Discover how to clean an artichoke as Francesca demonstrates it step by step. Spinach tossed with sautéed mushrooms and bits of bacon serves as the perfect side. An Olive Tapanade made from sweet, fresh Castleovedrano olives makes a lovely appetizer. The perfect finish is an Almond and Peach Torte. Pasta is more than just a delicious entrée or side dish; it’s an essential part of Italian culture. Italians have been creating pasta dishes for generations, varying the shapes and sauces to reflect regional traditions. In this hands-on class, led by our native Italian cooking instructor, you’ll prepare and enjoy "pasta au gratin" (egg fettuccine pasta tossed with tomato sauce, tiny meatballs, mozzarella and parmigiano cheese, then topped with homemade bread crumbs and baked), zucchini (stuffed with ground pork, herbs, and bread crumbs, topped with a light basil and garlic tomato sauce), apple and pecorino cheese salad (tossed with a lemon vinaigrette dressing) and lemon sorbet. Parasites are probably the single most undiagnosed health challenge in this country.  They cause strange symptoms and hide from detection very well.  Of the over 1,000 parasites that can affect us, only 40 to 50 can be identified through standard medical tests.  Fortunately, there are other, non-standard tests that can find more.  Come to this lecture to find out the best way to get tested for them and learn more about how parasites affect us, our digestion, our brain and what herbs can clear them out.
