Prepare and enjoy three traditional Italian style salads in this class taught by an instructor born into the Italian cooking tradition. Apprenticed in a specialty restaurant in Naples, Italy, she learned to create these Italian favorites using the freshest ingredients available. The menu includes: "fregola in insalata" (large, Sardinian couscous tossed in a lemon vinaigrette with asparagus, crab meat and grape tomatoes); "bistecca in insalata" (thinly sliced, grilled sirloin steak served over baby arugula, sliced Yukon gold potatoes and toasted pine nuts tossed with pureed lemon and sweet green olive dressing); panzanella (Tuscan style bread salad made with croutons, tomatoes, olives, anchovies and fresh basil tossed in a red wine vinaigrette and topped with grilled chicken tenders). Creating the perfect Risotto is an art that takes care and patience. Francesca will teach you how to make a Milanese-style dish where the Arborio rice is sautéed with onions and wine, then simmered in a chicken broth with saffron. The saffron gives the rice a beautiful creamy yellow color and just a taste of smokiness.  The Risotto is paired with another Milanese classic, Veal Shanks. These are braised in wine and vegetables, then topped with a fresh Gremolata. Enjoy these classic dishes with a side of sautéed Black Kale and a Parfait of strawberries and mascarpone cheese for dessert. Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from northern Italy. Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one includes "cotoletta Milanese" (thinly sliced veal cutlet coated with bread crumbs and sauteed, then topped with fresh parsley and lemon juice); wild mushroom risotto (simmered with chicken broth and white wine); a seasonal vegetable or salad; and lemon and green peppercorn sorbet. Week two includes "arista alla Fiorentina" (pork rib roast with garlic and rosemary, topped with an au jus reduction and served with Tuscan white bean ragu); sauteed black kale (in garlic and chilis); and "zuccotto" (a dome shaped sponge cake filled with coffee ice cream, amaretti cookies, marsala wine and walnuts). Italians have been creating pasta dishes for generations, varying the shapes and sauces to reflect regional traditions. In this class, led by our native Italian cooking instructor, you’ll prepare and enjoy fettuccine (tossed with sauteed spring artichoke hearts and topped with parmigiano cheese); pappardelle (ribbed egg pasta tossed with sauteed shrimp and asparagus tips in a white cream sauce); fusilli (tossed in a fresh tomato sauce with bits of prosciutto, dry champagne and fresh herbs, topped with pecorino cheese).
