Roasted Bell Peppers are made into a salad tossed with olives, capers and fresh herbs. Budino di Ricotta, a fresh ricotta cheese pudding adds the perfect final touch. Curried rice pancakes are designed to get dinner on the table quickly. Wendy adds cashews or seeds, curry powder, peas, sweet potatoes and chives to create an Indian inspired Egg Foo Yung. These pancakes are a favorite at potlucks and can be frozen to pull out later to take for lunches or for a really quick dinner on a night when there is absolutely no time to cook.  A fruit and yogurt garnish is the perfect gourmet touch! Complemented with a salad of fresh greens and a dessert of Orange and Cinnamon with a Moroccan twist. The perfect follow up for a curry. Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from southern Italy. Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one includes roasted goat (prepared with spring onions, fresh herbs, chopped tomatoes and new potatoes - baked and dusted with pecorino cheese); sauteed peas (with onions and pancetta, tossed with eggs and parmigiano cheese); mixed salad (with frisee and fennel, tossed in a lemon vinaigrette); and a traditional ricotta cake. Week two includes sword fish steak (sauteed in olive oil and thyme and topped with a pistachio butter sauce); spaghetti (tossed in a sauce of olive oil, garlic, anchovies and chilis, then topped with fresh parsley); roasted bell pepper terrine (baked with fresh bread crumbs, olives, capers and fresh herbs); and chocolate mousse with biscotti. In this course a complete rustic Italian meal is prepared featuring an entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Menu: chicken breast (thinly sliced and rolled with prosciutto and artichoke - then sauteed and topped with a white wine reduction); homemade polenta; steamed asparagus (topped with a sauce of chicken stock, butter and parmigiano cheese); zabaione (egg custard made with marsala wine and topped with fresh berries).
