Understand the basics of safe canning methods using a warm water bath and pressure canning. Assist the instructor in preparing the produce and take home a jar to begin stocking your pantry. Eggplant Parmesan is a classic dish that originates from southern Italy. Slices of eggplant are fried then layered in a pan with slices of fresh mozzarella, basil and parmesan cheese, then baked in a tomato sauce. Frittata di carcio is made by sautéing fresh artichokes then mixing them with beaten eggs and parmesan cheese to create a crustless pie cooked in a pan on top of the stove. Funghi ripieni are baked mushroom caps stuffed with cheese, sage and breadcrumbs. This amazing meal ends with a dessert of Cantaloupe marinated in honey and cognac. The ingredients are simple, but the art of combining them with the right herbs and other ingredients makes it 100% Italian. Most goats eat only “junk food”—boxes, newspaper, old shoes, and tin cans, but not Gregory. He prefers foods such as fruits, vegetables, eggs, fish, bread, and butter. His parents don’t understand and take him to the doctor and they work together to find a healthy balance of Gregory’s meals. Youngsters with a parent or guardian are invited to join us for a reading of Gregory is a Terrible Eater by Mitchell Sharmat, followed by a short discussion on healthy eating and a drawing activity.
