In this course a complete rustic Italian meal is prepared featuring a chicken entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist is preparing “scaloppine di pollo con funghi” (thin slices of chicken breast dusted in a seasoned flour then sautéed in white wine and butter). Then topped with mushrooms sautéed in butter and sage. Served with spaghetti tossed in a white cream sauce made with hazelnuts and Grana Padana cheese. Additionally, green beans salad tossed in a lemon vinaigrette dressing and finished with espresso mousse made with mascarpone cheese, topped with chocolate shavings and served with amaretti cookies. Whole Planet Foundation’s mission is to empower the poor living in developing-world communities with microcredit and the chance to create or expand a home-based business to lift themselves and their families out of poverty. Whole Planet Foundation is kicking off its 2014 Prosperity Campaign at Whole Foods Market stores companywide in February 2014, with the goal of raising 6.5 million in funds for poverty alleviation projects across the globe and right here in the U.S. Currently, the Whole Planet Foundation is funding microlending programs through microfinance institution partners in 57 countries in Africa, Asia, Latin America and the U.S., supporting more than 1.7 million people with a chance for a better life. To date, Whole Planet Foundation has authorized more than $37 million and disbursed more than $29 million through microlending partners worldwide.

 

With no collateral, credit history or a contract required, microloans offer many low-income entrepreneurs their first chance to gain financial independence, launch their own businesses and start a new life. Prosperity from their food carts, door-to-door cosmetic sales, at-home bakeries and flower shops are helping these women provide healthier meals, better housing and a solid education for themselves and their children.
