As fall breezes begin to mellow out the sweltering summer heat, Camille will show you how to add the gentle, tongue-tingling warmth of ginger to your healthy plant-based meals. See how to whip up a quick yet exotic ginger-laced Carrot Cashew Spread, which makes a delicious whole foods appetizer and a great filling between slices of healthy whole grain bread. Like a little sweet with your spicy? Then you’ll love the Raw Mango Ginger Soup Camille has in store for the second course. Try nestling some Ginger Marinated Tempeh atop some quick, healthy, colorful and flavorful Gingery Sweet Potatoes. To complete this delicious meal with a dollop of sweetness and tang, we’ll sample a delectable homemade Ginger and Citrus Sorbet.

What’s the secret to making a delicious, nutrient-dense meal out of whatever you’ve got on hand? Camille will literally spill the beans in this class that focuses on combining a rainbow of flavors, textures, and even colors to maximize your diners’ satisfaction (and health!). Try a protein-packed whole grain Creamy Tahini and Broccoli Pasta, topped with delightful and crunchy pine nuts. Eating a rainbow of nutrients is easy with a Kale Krunch Salad topped with crisp colorful vegetables and a creamy, sweet, citrusy fresh fruit and nut based dressing with a hint of sea salt and herbs. We’ll finish with a yummy Pumpkin Pudding that makes a great base for a seasonal parfait.

In honor of Whole Foods Market Coral Gables’ SIX YEAR ANNIVERSARY, Camille will showcase some simple six-ingredient dishes that will pamper your palate without a lot of elbow grease (or any other kind of grease, for that matter!). Bok choy, mushrooms, bean sprouts, peanuts, garlic and red peppers? Sounds like a mouthwatering meal on the fly! Whole grain, plant-strong Hummus and Veggie Pizzas that pack tons of phytonutrients and flavor without the saturated fat or cholesterol of traditional pizza? Simply delicious. Round out this awesome meal with a luscious helping of Fig and Walnut Crumble, and you’ll see you’re always only six ingredients away from pure deliciousness!

What’s The Dill?

Leafy green herbs are more than flavorful – they pack a mean dose of nutrients, to boot! Camille will show you that you don’t need to be a culinary wizard to make use of fresh fennel, dill, basil, tarragon, cilantro, bay leaves, or parsley! We’ll start with a herb-infused raw soup in which corn, garlic, tomato, avocado and dill come together in perfect harmony. Second course is a Fennel and Raisin Pilaf, which combines brown rice with aromatic herbs, fresh veggies, and the sweetness of plump raisins. Finally, herbs and bright berries will combine in a deliciously different Basil-Mint-Berry Crumble, the perfect sweet ending to a plant-tastic healthy meal.

Bring your wee ones and not-so wee ones alike and watch Camille prepare some delicious, plant-strong dishes that are so easy, everyone can lend a hand! A Kale, Carrot, and Avocado Salad is a rainbow of nutrient-dense flavor even kids love (especially when topped with Camille’s sweet homemade Raspberry Cashew dressing!). Polenta Pizza is a fun dish to make together and to top with all the bright and healthy add-ons your family can dream up! For dessert, kids can layer their own fruit-based Nice Cream Sundaes with their favorite healthy toppings. Food is fun to make together!

The 28-Day Engine 2 Challenge is a plant-strong way of eating based on the best-selling book, The Engine 2 Diet. The main idea is to incorporate more whole plant foods into your diet to support your heart, your mind, your body and your taste buds! This life-changing program was developed by professional triathlete and firefighter Rip Esselstyn. Esselstyn brought a plant-based diet into his Texas firehouse to save the life of a fellow firefighter whose cholesterol level had hit a dangerous high of 344. In the process, the young man nearly cut his cholesterol in half and the entire engine company lost weight and improved its health in a matter of just 28 days.  In this intro class you’ll learn the approach those firemen took and how you can take the challenge yourself with the support of The Engine 2 Diet book, Healthy Eating Specialist Camille, and other health-minded members of the community!

28-Day Engine 2 Challenge, Week 1 – The Dairy Dilemma

Wednesday, September 18: 7 pm in our Lifestyle Center – FREE

Start your engines! This class marks the true start of the Challenge. Whether you’re going full throttle with the program (the “Firefighter” way) or easing into the change (the “Cadet” program), you’ll be experiencing your first week of “plant-strength” with increasing amounts of whole plant foods. The aim this week is to ditch dairy products and processed and refined foods, including white rice, white pasta, white bread, and processed cakes, sodas, etc. Camille will support you with healthy information about why these changes are beneficial to your health, and will demonstrate and sample healthy and delicious plant-strong recipes that make easy and satisfying stand-ins for your old dairy dishes!

28-Day Engine 2 Challenge, Week 2 – My Beef with Meat

Wednesday, September 25: 7 pm in our Lifestyle Center – FREE

This week we’ll continue our plant-strong journey by saying sayonara to meat, chicken, eggs, and fish, while continuing our boycott of dairy and refined foods. Once again, class will focus on the healthy reasoning behind these changes, and Camille will show and sample easy and tasty Engine 2 recipes that will make you forget why you ever ate meat in the first place.

28-Day Engine 2 Challenge, Week 3 – Put the Lid on Oil

Wednesday, October 2: 7 pm in our Lifestyle Center – FREE

In week three, Engine 2 “Cadets” will start choosing foods that contain healthy whole foods fats (avocado, nuts, seeds) in place of those that contain added oils. Eating the whole food (the olive, the almond, or the seed, for example) gives your body the phytonutrients, fiber, vitamins, minerals, and water that calorie-dense, nutrient-poor, processed oils lack. This week’s challenge is to read labels and leave on the shelf any foods that contain extracted and processed fats like olive oil, canola oil, coconut oil, vegetable oil, or any other oil at all. We’ll also learn new, and not too drastically different, ways of cooking without processed oil, and try some delicious dishes!

By this week’s class, all participants will have gone 100% whole-foods plant-strong for at least a full 7 days, and they’ll continue for another 7 days of the challenge as the pounds come off and their bodies continue to benefit from their new nutrient-rich way of eating. We’ll celebrate successes (and discuss challenges) while whipping up and tasting some Engine 2 delicacies.

Join Camille in the Lifestyle Center for some kid-friendly crafts, games, and healthy snacks as we celebrate Whole Foods Market Coral Gables’ SIXTH BIRTHDAY! Children will get to decorate their own party hats and even some fancy birthday cards for display on the walls of the café. We’ll learn about bugs and worms and how they help with the Earth-friendly process of composting, which Whole Foods Market practices as part of its Green Mission. Kids will participate in a fun birthday bug hunt with prizes for the best “hunters,” and we’ll round out the party with a helping of a healthy “Dirt Cake,” made delicious with dried fruit, coconut, cacao, and pecans!
