Salty Sweet Treats
Monday, March 4th
6:00 PM - 8:00 PM

This class will be taught by Chef Ani. In most standard dessert recipes, sweet flavors rule the day, with maybe a little pinch of salt, just for flavor. Want to turn the flavor of your desserts up to 11? Cut a little sugar and add a little more savory, salty goodness. Not only do salty ingredients temper the sweetness of sugar, but salt can make our taste buds more effective, deepening flavors and creating a delicious balance in your dessert. In this class, we’ll explore the chemistry of salt, examine the different types of salt available and discuss how to work it into your desserts for maximum enjoyment. Additional lessons will include candy making basics, how to work with chocolate ganache and how to brown butter. Class has hands on opportunities as desired. Dinner will not be served during this class, but you will take home lots of delicious treats, so please plan accordingly. On the menu:

Rock and Roll Sushi- SOLD OUT!
Friday, March 8th
6:30 PM - 8:00 PM
Cooking Classroom, $30

This class will be taught by Chef Ani. Sushi has a rich, deep history. The concept is hundreds of years old, taking advantage of natural resources from its home region of Japan and providing a fix for those who wanted to preserve their supper without refrigeration. To Americans, however, sushi is a new, mysterious thing- becoming popular on the West Coast in the early 1950s, and going from the shores of the Pacific to the shores of the Great Lakes as few as thirty years ago. With any new cuisine comes mystery, and we’re here to delve into the mysteries of sushi- its terminology, the differences between Japanese and American style sushi, how to make great sushi rice and how to form maki, or rolls, in the comfort of your very own home. Each participant will have the opportunity to learn the maki method, then dive in and choose their own fresh fruits, vegetables and seafood to create three maki rolls. After enjoying your delicious homemade sushi, you go home with the bonus of your very own sushi mat for future rolling ventures. This class is hands on, is suitable for gluten free customers and has options for vegetarian and vegan customers. Come hungry!

Mastering Meat Cookery- SOLD OUT!
Tuesday, March 12th
6:00 PM - 8:00 PM
Cooking Classroom, $25

This class will be taught by Chef Ani. There is some serious science behind cooking protein rich foods such as meat and seafood. Adding meat to a hot pan or oven seems like a simple thing, but it is in fact a series of complex things going on in that pan that give you a perfect sear, a precise doneness and crispy skin. Luckily, with a few tricks of the trade, proper pan selection, a little patience and a little time, you can turn out restaurant-quality proteins without making a reservation or paying through the nose. The first step to cooking great meat is to find a great butcher, and we’ve got you covered. In this class, we’ll tour the meat department and meet our knowledgeable and helpful meat Team Members, who can guide you through a department full of the best meat in town. Then head back to the classroom with Chef Ani, where she’ll teach you how to perfectly pan sear, stir-fry, poach and braise delicious meaty dishes. You’ll discuss thermodynamics, metallurgy and the science of seasoning, then tuck into the delicious dishes that you will create. Class has hands on opportunities as desired. Come hungry! Peak Pick: The Best of the Bulb
Monday, March 25th

This class will be taught by Chef Ani. Cheap, versatile and plentiful, we add leeks, garlic, onions, shallots and other members of the allium family to many of our dishes without a second thought. They’re part of a traditional mire poix for soup, sauces, and many more dishes, but cooks often balk at the idea of a dish that allows onions and their kin to be the dominant flavor. This is a shame, because onions, shallots, leeks and the like are easy to work with and can provide a wide range of flavors and textures depending on the manner in which you cook them. Discover the sweet, musky, savory magic that alliums possess and how to take them from back-up singer to main attraction. Other lessons learned will include how to cut onions, tear free, how to preform basic cuts such as the slice, dice, mince and julienne, and how to make a compound butter. Class is suitable for vegetarians, has hands on opportunities as desired, and breath mints will be provided upon the completion of the class. Come hungry! On the menu:

  • Bagna Cauda with Garlic Bread
  • French Onion Soup
  • Braised Leeks with Hazelnuts
  • Linguine with Sicilian “Ugly Onions” and Roasted Garlic Butter
  • Mushroom and Shallot Spedini with Scallion Vinaigrette
  • Candied Onions

The Basics of Beans
Tuesday, March 26th
6:00 PM - 8:00 PM
Cooking Classroom, $25

This class will be taught by Chef Ani. Beans and legumes are some of the powerful things you can have in your pantry- and on your plate. With a long and illustrious history of feeding hungry gourmets on the cheap, beans and legumes figure into almost every culinary culture on Earth, and with good reason. They’re an excellent source of lean protein, fiber and complex carbs that are low in calories and contain no cholesterol. They’re neutral in flavor, so they can blend seamlessly into dishes, adding a creamy texture and subtle earthiness to everything from appetizer to dessert. In this class, we’ll discuss soaking beans, how to cook them by many methods including braising, pressure cooking, slow cooking and boiling, when to use dry vs. fresh beans, and how to pick the right bean or legume for your dish. You will also learn how to toast and mix your own custom spice blend for jazzing up everything from beans to broccoli. This class has hands on opportunities as desired and is suitable for vegan customers. Come hungry! On the menu:

  • Two Bean Hummus with Lemon and Sesame
  • Fat Free Refried Beans
  • Maple Baked Beans
  • Black Bean Burgers
  • Garam Masala Roasted Chickpeas
  • Coconut Lentil Cookies

Peak Pick: The Curious Case of Citrus
Thursday, March 28th
6:00 PM - 8:00 PM
Cooking Classroom, $30

This class will be taught by Chef Ani. All year long, basic citrus is available. We might add some lemon to tea or lime to guacamole, and enjoy its tang, but citrus has a lot more to give, especially in the winter, when produce bins are piled high with a plethora of cold weather citrus varieties. Not only is citrus a delicious way to season a dish, but adding tart, complex citrus juice or zest to a dish can actually enhance other flavors in your dish, giving you a deeper, more complex flavor overall. In this class, we’ll catalog the wide variety of citrus fruits that we stock here in our store, dissect a citrus fruit to discuss its useful culinary parts and discuss some must-have tools for getting the most out of your citrus fruits. Additional lessons will include how to infuse vinegar, how to make a syrup and how to cut citrus supremes. Class has hands on opportunities as desired. Come hungry! On the menu:

  • Citrus Shrub
  • Baked Ricotta with Preserved Lemon, Honey and Black Pepper
  • Silky White Bean Soup with Citrus Gremolata
  • Seasonal Salad with Olives and Orange

This class will be taught by Chef Ani. For such a small country, Italy has proudly produced a wide variety of different regional cuisines. From the North, risotto Milanese. In Rome, veal and pasta rule the day. But in Chef Ani’s (biased) opinion, the best food can be found on the Italian island of Sicily. Using popular Sicilian ingredients like blood oranges, pistachio, eggplant and saffron, we’ll whip up an aromatic feast that celebrates the sweet, sour, bold flavors of the region. Additional takeaways from this class include how to make perfect risotto, how to fry at home safely and easily and how to make a brittle. Class has hands on opportunities as desired. Come hungry! On the menu:

  • Arancine (Fried Risotto Croquettes)
  • Seasonal Salad
  • Calamari a La Plancha (Seared Squid with Lemon)
