During the course of our class tonight, we’ll discuss how cheese is made, how to navigate the cheese counter, how to set up a great cheese board and how to pick the right cheese for the right job. Anticipate exploring all sorts of cheeses, from sheep to goat to cow, from soft to firm to hard, and from mild to very funky. Additional lessons included in this class are how to turn cheese into crackers, how to infuse broths with cheesy flavor and how build a perfect risotto.  This class is vegetarian friendly, has gluten free options upon request and hands on opportunities as desired. Often deemed unhealthy because of its higher fat content, it seems that the lowly pig may have received some bad press. In this class we will dispel some negative rumors about this ever so tasty animal, go over our high quality standards for pork, and discuss a variety of preparation methods and techniques. Exploring the world of pork is no simple task, but we have done our best to compile some of the most delightful and interesting recipes that you are sure to enjoy as we begin to see how wonderful it can be to dine on swine! The flavors in Thai cuisine may be complex, but the ingredients needed to recreate those flavors and aromas, sights and sounds at home are simple and easily obtained here at Whole Foods Market. Join us to investigate the Thai pantry, learn how to balance sweet, salty, spicy, bitter and sour flavors to create flavorful soups, salads, main dishes and desserts, and how to create the common Thai condiment of fish sauce, garlic and lime known as phrik nam pla. While the savory side of the kitchen relies on trial and error and progressive seasoning to get the flavors dialed in, the baking side of things requires a much more scientific approach. Baking is chemistry, requiring very specific measurements added together in a very precise way. The science runs rampant through the baking and pastry world and together we will prepare some chemistry heavy recipes and participate in a series of kitchen experiments before we enjoy the fruits of our labors as we eat what we have prepared together. The concept is hundreds of years old, taking advantage of natural resources from its home region of Japan and providing a fix for those who wanted to preserve their supper without refrigeration. To Americans, however, sushi is a new, mysterious thing- becoming popular on the West Coast in the early 1950s, and going from the shores of the Pacific to the shores of the Great Lakes as few as thirty years ago. With any new cuisine comes mystery, and we’re here to delve into the mysteries of sushi- its terminology, the differences between Japanese and American style sushi, how to make great sushi rice and how to form maki, or rolls, in the comfort of your very own home. Each participant will have the opportunity to learn the maki method, then dive in and choose their own fresh fruits, vegetables and seafood to create three maki rolls. After enjoying your delicious homemade sushi, you go home with the bonus of your very own sushi mat for future rolling ventures. There is an art and science behind getting them just right and in this class we will delve into what makes a sauce work and what makes it break, and once it is broken, is it fixable and how do we fix it? When the temperatures start to drop and the leaves explode in a riot of color, it’s time to get cozy in the kitchen and say hello to fall favorites such as apples, pears, squash and root vegetables. Using great cold weather techniques such as braising, roasting and pan-roasting, we’ll bring out the best in these cold-weather components, learn how to batch cook them for comforting meals all week long, and how to preserve them for the rest of the year. Additional areas of focus in this class include how to caramelize onions, how to pan-roast duck, how to safely cut hard squashes, working with puff pastry and how to make a delicious salted caramel. This class will be taught by Chef Ani. Chances are, you’ve already cut into one pumpkin this season, and it’s sitting on your porch sporting a ghoulish glow. Large carving pumpkins may be best out of doors, but small sugar pumpkins belong in your kitchen- and in your belly. Similar to butternut squash, pumpkin is easy to cook, packed full of vitamins and content to be both a sweet and savory ingredient. We’ll discuss the history of the pumpkin and its importance to colonial America, how to pick a fine pumpkin and how to crack it open safely. Additional areas of focus include how to make light, fluffy gnocchi, how to make brown butter, how to make pumpkin syrup and how to make delicious spiced pumpkin seeds.
