September 4 is National Macadamia Nut Day. While most people associate this famous nut with Hawaii, it actually originates from somewhere much further south - so south, in fact, that it’s “down under” the equator!

Aborigines, a people indigenous to Australia, have eaten the macadamia for hundreds, if not thousands, of years and know it by several names, including “gyndl” or “kindal kindal.” According to Lynne Ziehlke, market development manager of theAustralian Macadamia Society, the buttery nut is particularly interesting because it has transcended millenniums.

“[Today], we regard the macadamia as very special,” Ziehlke said. “But even indigenous people did so as well [thousands of years ago]. They ate them but also traded them as ceremonial gifts, so they tended to use and treat them more special than other nuts.”

The “gyndl” was eventually introduced to the Western world when English botanist Allan Cunningham discovered them in the 19th century, according to Australian-based Macadamia Castle, the part café, part theme park, part petting zoo that incorporates all things macadamia.

Nearly 30 years later, it was officially named by another botanist who worked with the nut, Ferdinand von Mueller, after a scientist friend of his, Dr. John Macadam. Surprisingly, though, the first person to eat the nut wasn’t Cunningham, Mueller or even its namesake, Macadam.

Walter Hill, a colleague of Mueller’s and the director of the Botanical Gardens in Brisbane, was researching the genus and “asked a young associate to crack some nuts for germinat[ion],” explains Macadamia Castle’s website. While working with the nuts, the young associate tasted it, not realizing that it could have been poisonous. After monitoring the associate’s health for several days and seeing no side effects other than a satisfied tummy, Hill ate the nut himself and “proclaim[ed] he had discovered a nut to surpass all others.”

Fast forward a hundred years or so, and macadamia nuts are incorporated into all types of dishes, from cookies and fish, to cheesecake and bread.

But before you go nuts celebrating with something tasty and covered in chocolate, here are a few fun facts about this fabulous treat:

  • Macadamias are the hardest nut to crack, which is why they took so long to come into commercial production, explained Ziehlke.
  • Desperately trying to lower your cholesterol but getting tired of the same bowl of Honey Nut Cheerios? Try some macadamias – the nuts contain monounsaturated fatty acids that studies say may lower cholesterol.
  • Macadamias are toxic to dogs, so make sure you don’t share that macadamia energy bar with Old Yeller - if you do, he could experience muscle tremors, vomiting or lameness, among other symptoms.

Today's food holiday is worth its weight in dough - September 5 is National Cheese Pizza Day.

There’s something so simple yet satisfying about a cheese pizza. Sure, it’s delicious when served straight out of a brick oven at your local pie place, but even more so is when you make it yourself.

Making pizzas at home is much easier than you think and only requires minimal prep work. Here are some tips:

- Pizza dough needs to rest. The dough consists of water, flour, yeast and salt. The dough will need about an hour and a half before it’s ready to use. If you’re worried about the end-of-day slump, make the dough in the morning. It literally takes about 10 minutes if you’ve got a stand mixer.
- If you think for a second that you might make pizzas more than once in your life, buy a pizza stone. Most cost less than $15 and they’re key to a crispy crust.
- You don’t always have to bake your pizza, it’s also great on the grill.

Now, specifically for a cheese pizza:

- Choose a blend of cheeses. Ones that melt and brown up easily should be balanced with harder, more salty cheeses. Think fresh mozzarella with pecorino Romano or Parmigiano-Reggiano. You can also mix goat's, sheep's and cow’s milk cheeses for different tangs.
- Don’t forget the seasonings. Oregano, red pepper flake, rosemary and black pepper are particularly keen on a cheese pizza.
- Don’t heat up leftovers in the microwave, do so in a warm oven.

While vanilla has often beat out chocolate as the most popular milkshake flavor, today - National Chocolate Milkshake Day - is for the cocoa lovers.

As we learned in June on National Vanilla Milkshake Day, the milkshake, as we know it today, was invented by a Walgreen's employee in Chicago in 1922. He added two scoops of ice cream to a drink called a malted milk. Although the concept of milkshakes had been around since about 1885, it wasn't until that fateful day that the drink became popularized.

There are a few of ways to make your chocolate milkshake stand out from the crowd. Try using chocolate-coffee ice cream, or even mint chocolate chip ice cream. Both flavors add that extra kick to regular chocolate ice cream. You can also use vanilla ice cream but make your own chocolate syrup to flavor it. For the syrup, mix cocoa powder, sugar, vanilla, a little salt and water and heat in a saucepan until the mixture thickens.

- Despite their name, peanuts are not a nut, they’re legumes related to the bean family.

- Peanuts originated in South America, most likely Paraguay.

- China produces 41.5% of the world’s peanuts, followed by India and the U.S. Georgia is the leading peanut producer in the U.S.
- There are four types of peanuts grown in the U.S.: Runner, Virginia, Spanish and Valencia.

- Peanuts are a good source of fiber, and are naturally free of trans fats and sodium. They contain the most protein of any nut.

- About 1-2% of the US population is allergic to peanuts.

- It takes approximately 540 peanuts to make a 12-ounce jar of peanut butter.

- Thomas Jefferson and Jimmy Carter were both peanut farmers.

- Astronaut Allen B. Sheppard took a peanut with him to the moon.

Guacamole is made from avocados, which are packed with more than twenty vitamins, contain "good fats" that reduce cholesterol, can help fight cancer, and can be used as a substitute for butter or shortening in baking.

September 18 is National Cheeseburger Day.

Ah the cheeseburger. It's as American as, well, American cheese. But that’s as far as the patty’s origin gets narrowed down. Various eating establishments (mostly in California) claim to have invented the cheeseburger. The Pasadena Sun did due diligence in investigating the burger’s background and while it heavily leans toward one over the other, it’s left undecided.

The front runner for the American classic is “The Rite Spot” in Pasadena, California. Legend has it, one of the cooks there, Lionel Clark Stenberger, slapped a piece of cheese on his burger and the rest was history. The year was around 1924, but could have been more like 1927. Backing up this assertion, the other main family laying claim to cheeseburger’s fame reportedly worked at the Rite Spot before going out on their own.

Whatever the history, the cheeseburger has cemented its place at the American table. Chefs across the country have jumped on the meat wagon, coming up with ideas like Kobe, lobster and brie burgers, or burgers laden with Swiss cheese foam, seared foie gras and Coca-Cola ketchup.

You can create your own pecan cookie adventure, or recipe, today! It's one of those lovely munchies that you can make a multitude of ways, and none of them are wrong.

We already celebrated pecan sandies, but you can also raise a toast to pecans by tossing them into cookie dough alongside chocolate chunks, raisins and oatmeal,caramel, orange or lots of butter. Pop 'em on top or chop them into pieces - no matter how you like them, pecans are a great addition to your favorite cookie recipe.

But beware - it's how you pronounce "pecan" that's nuttin' but trouble.

Just in time for the end of National Breakfast Month, September 26 is National Pancake Day.

Stacked and soaking up butter and syrup, spread out and covered with a fruit compote, pancakes are the ultimate comfort food. It’s no surprise this breakfast staple has a long history, dating back to the ancient Greeks. But, depending on where you are, pancakes will look vastly different.

In Germany, they’re made out of potatoes; in France and Belgium, they’ll be thin and light; in South Africa, they’re filled with lemon juice and sugar; and in Mexico, you might find a hotcake (a pancake made with cornmeal instead of wheat flour).

Depending on your batter, you can either end up with a crêpe, a pancake, a crumpet or a flapjack. All use the same technique: A batter of flour, eggs, milk and, in some cases, a leavening agent is beaten, left to rest and then poured in batches onto a hot griddle or pan. Typically, when bubbles form on the uncooked side of the pancake, it’s ready to flip.

Pancakes don’t necessarily stick to the sweet side of things either. In some parts of the world they’re served for dinner, filled with savory ingredients such as ground meat, onions and cheese. Because the American-style pancake is hard to roll up, and therefore hard to fill with ingredients, any additional flavors are added to the batter. Common preferences include fruit, nuts, chocolate chips and even granola.

Most Western countries celebrate what’s called Shrove Tuesday, or Pancake Tuesday. In America, this day is called Fat Tuesday. It’s the day before Lent starts, a day most Christians use to indulge in the things they’ll be giving up until Easter. Back in the day, most people gave up eggs, sugar, fat and flour - all things found in pancake batter. The tradition has stuck, and now most English-speaking Christians eat pancakes the night before Ash Wednesday.
