Rip Esselstyn created The Engine 2 Diet after he discovered the dangerously high cholesterol level (344!) of one of his fellow firefighters at the Austin, Texas, Engine 2 fire station. The results were so dramatic – and the food so delicious – that Rip wrote a book about it, which became a national best seller.
