Asian Chicken Salad

This Asian-inspired salad is easy and full of flavor, combining crunchy cashews with sweet oranges and baby corn. Ingredients with an asterisk (*) are available in the Whole Foods Market Family of Brands.

    Ingredients: 
    • 1 pound boneless, skinless chicken breasts
    • 1 tablespoon canola oil*
    • Salt and pepper to taste
    • 1/4 cup lemon tahini dressing*
    • 1 tablespoon toasted sesame oil
    • 3 tablespoons rice vinegar
    • 1 ( ounce) can mandarin oranges, drained*
    • 6 pieces baby corn, quartered*
    • 3/4 cup (about 3) chopped scallions, white and green parts
    • 2 cups finely sliced Chinese Napa cabbage
    • 2/3 cup roasted and salted cashews*

    Method: 

    Preheat oven to 400°F. Brush chicken breasts with oil and season with salt and pepper. Bake 20-25 minutes. Let cool and cut into 1/2-inch pieces. In a medium bowl, whisk together salad dressing, sesame oil and vinegar. Add chicken to bowl, stir to coat and then gently toss together with oranges, corn and scallions. Place cabbage on a large platter and top with chicken mixture and roasted cashews.
