Baked Lobster with Cilantro-Orange Vinaigrette

Serves 2 to 4

Serve this flavorful and lighter lobster dish with black bean, corn or quinoa salad.

  • 2 Clearwater whole frozen lobsters, thawed according to package directions
  • Vinaigrette
  • 1/2 cup extra virgin olive oil
  • 1 large orange, Juice and zest of
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped shallots
  • 1/4 cup chopped fresh cilantro
  • Sea salt and ground black pepper, to taste

Preheat oven to 400°F. Cut lobsters in half lengthwise with a sharp knife or cleaver. Place the four pieces in a baking dish. Prepare vinaigrette by whisking together olive oil, orange juice and zest, lemon juice, shallots, cilantro, salt and pepper. Drizzle lobster with half the vinaigrette. Bake 15 to 20 minutes or just until flesh turns white. Serve with remaining vinaigrette for drizzling or dipping.
