Basil Tomato Tart

Serves 6 to 8
Serve this rich tart, made with a whole wheat crust, as a first course or light lunch, accompanied by a green salad.
  • 1 cup whole wheat bread crumbs
  • 1 cup whole wheat flour
  • 1/2 cup (1 stick) butter
  • 1/2 teaspoon salt
  • 2 tomatoes
  • 1 cup low-fat ricotta
  • 1/2 cup grated mozzarella cheese
  • 2 eggs
  • 1 cup fresh basil leaves

Preheat oven to 350°F. Combine bread crumbs, flour, butter and salt in a food processor until dough comes together. Using hands, press into a 9- or 10-inch springform pan. Bake until golden, 10 to 12 minutes.

Meanwhile, slice 2 to 3 tomatoes thinly and place on a paper towel. Sprinkle with salt and set aside to release juices.

In a food processor, combine ricotta, mozzarella, eggs and basil leaves just until blended.

Top dough with a layer of tomatoes followed by cheese filling. Top with another layer of sliced tomatoes and drizzle with olive oil. Bake until golden brown and set in center, 45 to 55 minutes.
