Beet and Mint Slaw

Beet and Mint Slaw

Serves 6

Serve this colorful slaw at summer cookouts alongside your favorite grilled foods.

  • 3 1/2 tablespoons rice vinegar
  • 5 teaspoons white miso paste
  • 1/2 teaspoon ground black pepper
  • 3/4 cup raisins
  • 3 red or golden beets, peeled and grated
  • 1 fennel bulb, fronds and bulb thinly sliced
  • 1 bunch green onions, chopped
  • 2/3 cup mint leaves, sliced

In a large bowl, whisk together vinegar, miso and pepper. Soak raisins in boiling water to cover 5 minutes; drain and add to bowl. Add beets, fennel, green onions and mint; toss to coat.
