Berry and Pudding Parfaits

Fresh blueberries and strawberries are layered with creamy vanilla pudding and topped with whipped cream and mint in this striking summer treat. Easily substitute nondairy milk and whipped topping to make this a perfect vegan option.
  • 3 cups strawberries, halved
  • 2 cups blueberries
  • 3 teaspoons brown sugar, divided, optional
  • 1 cup cold whipping cream or prepared whipped cream topping
  • Fresh mint sprigs, optional
  • 1 package vanilla pudding mix, prepared according to package directions and chilled

Put strawberries, blueberries and 1 to 2 teaspoons of the sugar into a large bowl and toss gently; set aside.

Beat whipping cream and remaining 2 teaspoons brown sugar in a large bowl until soft peaks form. (This step can be eliminated if using a prepared whipped cream product.) 

Spoon a small amount of the berries into the bottom of a parfait or wine glass. Top with a heaping spoonful of vanilla pudding. Layer with more berries, then pudding, and once again berries. Top with whipped cream, a few berries and a sprig of mint. Repeat process with remaining ingredients to make 4 parfaits, then serve immediately.
