Buckaroo Summer Squash

Cowgirl Creamery developed their Organic Buckaroo Cheese in 2010 to celebrate Whole Foods Market's 30th birthday. Here we celebrate its great flavor in a light 21st-century update to the casseroles of yesteryear.

Ingredients
- 1 cup grated Cowgirl Creamery Organic Buckaroo or UnieKaas Robusto cheese
- 25 365 Everyday Value® Organic Wheat Square Crackers, crushed
- 1/4 cup chopped fresh parsley
- 1/4 medium red onion, finely chopped
- 1 tablespoon chopped fresh thyme
- 3 summer squash, such as zucchini or yellow squash, cut into 1/2-inch-thick rounds
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
Preheat the oven to 425°F.
In a medium bowl, toss together cheese, cracker crumbs, parsley, onion and thyme.
In a large bowl, toss together zucchini, oil, lime juice, salt and pepper.
Arrange squash in a 9x13-inch casserole dish.
Scatter cheese mixture evenly over the top and bake until melted and golden brown and squash is just tender, about 20 minutes.
