Carrot Slaw

Serves 4

Crisp, fresh celery root adds a punch to this traditional carrot salad. Fold in raisins or sunflower seeds for added texture and color, if you like.

  • 3 carrots, grated
  • 1/2 cup grated radishes
  • 1 cup grated celery root
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt

Combine all ingredients. Taste and adjust seasoning with salt, pepper and lemon juice.
