Clams in Green Sauce

Clams in Green Sauce

Serves 2 to 4

Substitute mussels for clams, if you like, in this Spanish tapas recipe, also known as Almejas en Salsa Verde. Make sure to discard any clams that remain unopened after cooking.

  • 12 small clams
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 1/2 cup dry white wine
  • 1/2 cup chopped fresh parsley
  • Freshly ground black pepper or crushed red chile flakes

Rinse clams well to remove any sand or dirt. Heat oil in a medium skillet, and cook garlic until light brown (do not burn). Add white wine and clams. Cover and simmer until clams open, about 5 minutes. Add parsley, stir and season with pepper. Serve immediately.
