Coffee-Splashed Peppermint Ice Cream

This is our wintery take on Italy's famous affogato ("drowned") ice cream and espresso treat. For best flavor, brew the coffee about double strength and have it hot enough to begin melting the ice cream immediately. Garnish with rolled wafer or waffle crème cookies.

  • 6 scoops (1/2-cup each) peppermint ice cream
  • 3/4 cup hot strong-brewed coffee

Place scoops of ice cream in individual dessert bowls or glasses and drizzle each with 2 tablespoons coffee. Serve immediately.
