Creamy Chipotle Dip

Creamy Chipotle Dip

Makes about 1 cup

Serve this smoky dip with tortilla chips or spread it on tortillas and top with shredded chicken to make tacos. Remove and discard seeds from the chipotle peppers for less-spicy results.

  • 8 ounces Neufchâtel cheese, softened
  • 1/4 cup chipotle peppers in adobo sauce, roughly chopped, more or less to taste
  • 1 thick green onion or two thin ones, chopped
  • 1/4 cup fresh cilantro, chopped

Combine cheese, peppers and adobo sauce in food processor; blend until thoroughly combined, scraping down sides of food processor bowl as needed. Pulse in the cilantro and green onion until combined.
