Creamy Pesto Dip

Serves 4

This dip is equally delicious when served slightly chilled or at room temperature. To serve, arrange raw vegetables like celery sticks, cucumber slices and whole radishes on a plate for dipping.

  • 2 bunches basil
  • 1 clove garlic
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon coarse sea salt
  • 1 cup sour cream
  • 2 teaspoons pine nuts

Combine basil and garlic in a food processor and process to a fine purée. With machine running, add oil in a thin-steady stream. Stir in salt, cover and chill for 2 to 4 hours. Stir in sour cream and toasted pine nuts.
