Creamy Vanilla Cashew Frosting

This deliciously simple vegan vanilla frosting can be dressed up any way you like. Try adding ground cardamom and fresh ginger or stirring in mashed raspberries for a pink spread. Note this frosting is a creamy coffee color.

Ingredients
- 1 cup raw cashews, soaked in water overnight and drained
- 8 pitted dates, soaked in warm water to cover for 10 minutes; reserve liquid
- 1 tablespoon pure vanilla extract
Method
Place cashews, dates plus their reserved soaking liquid and vanilla in a high-speed blender or food processor.
Pulse the mixture several times and then blend until the ingredients are thick, smooth and creamy.
If needed add 1 tablespoon at a time of warm water to the blender until the desired consistency is achieved.
Use the frosting immediately, or store in an airtight container and refrigerate for up to 3 days or freeze for up to 1 week.
