Curried Spinach with Yogurt

This quick vegetarian side dish, flavored with fresh salsa and garnished with a dollop of yogurt, is bright and flavorful. Serve it alongside a pasta or quinoa dish for a complete meal.

Ingredients: 
  • 2 tablespoons butter
  • 2/3 cup prepared fresh salsa
  • 1/2 teaspoon curry powder, depending on taste
  • 8 cups packed spinach leaves, washed and drained
  • 1/8 teaspoon salt, or to taste
  • 2 tablespoons plain yogurt

Method: 

Sauté salsa with curry powder in butter for 3 minutes. Add the spinach and salt. Cover and steam for 3 to 5 minutes or until spinach is wilted and cooked to desired consistency. Garnish each serving with a tablespoon of yogurt.
