Dijon Vinaigrette

Makes about 1 cup

This classic, French vinaigrette is a piquant dressing for greens like romaine and red leaf lettuce. Add a pinch of sugar, if you like.

    Ingredients: 
    • 1 tablespoon finely chopped shallot
    • 1 tablespoon Dijon mustard
    • 1/4 cup red wine or apple cider vinegar
    • 2/3 cup extra virgin olive oil
    • Salt and freshly ground pepper, to taste

    Method: 

    Whisk together shallots, mustard and vinegar in a medium bowl. Drizzle in oil while whisking constantly, then season with salt and pepper.
