English Pea Salad with Lemon and Mint

Serves 6

The spring peas in this fragrant cold salad are spiked with mint plus fresh lemon zest and juice.

  • 4 cups shelled fresh English peas
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons chopped fresh mint
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1 shallot, finely chopped
  • Finely grated zest and 2 tablespoons juice from 1 lemon

Bring a large pot of salted water to a boil. Add peas and cook until just tender, 1 to 2 minutes. Drain and rinse under cold water until cooled completely. Pat dry with a paper towel and transfer peas to a medium bowl. Toss with oil, and then gently stir in mint, salt, pepper, shallot, lemon zest and juice and 1/2 teaspoon salt. Serve immediately, or refrigerate until ready to serve or up to 3 days.
